Barbeque Nation Style Cajun Potatoes

cajun spice mix
  1. • 1 teaspoon garlic powder
  2. • 1/2 teaspoon dried oregano
  3. • 1/2 teaspoon dried thyme
  4. • 1/2 teaspoon ground black pepper
  5. • 1/2 teaspoon red chilli powder
  6. • 1/2 teaspoon red chilli flakes
  7. • 1/2 teaspoon onion powder (optional)
crispy potatoes
  1. • Baby Potatoes – 10-12 no
  2. • Mayonaise – 4 tablespoon (i used eggless)
  3. • Cajun Spice Mix – 2 tbsp
  4. • Salt to Taste
  5. • 1 teaspoon tomato ketchup
  6. • Oil for Frying
  7. • Finely chopped onions – 2 tsp
  8. • Finely chopped coriander leaves – 1 tsp
Making the Dip for the Cajun Potatoes
  1. Mix together the Mayonaise ,tomato ketchup and Cajun Spice Mix
  2. Set aside.
Preparing the Potatoes
  1. Scrub the baby potatoes to get rid of any dirt.
  2. Boil ,microwave or pressure cook the baby potatoes (with skin) till just tender.(90% cooked)
  3. Let the potatoes cool.
  4. Using a heavy spoon, press each baby potato till the skin just splits.(do not break)
  5. In a shallow pan, heat about 2 tablespoon oil.
  6. Over medium heat, shallow fry the baby potatoes.
  7. After 10-15 min ,potatoes turn crispy & golden brown color.
  8. Lay the fried potatoes in a plate
  9. You can add mayo spiced mix to potato along with finely chopped onions & coriander.
Notes
  1. 1. Instead of baby potatoes,regular potatoes can also be used
  2. 2. Do not remove skin ,skin makes potatoes more crispy
  3. 3. You can also used store brought cajun spice mix.
  4. 4. cajun spice mix: can be made 1 month ahead.store airtight at room temperature.
  5. 5. Mix spiced mayo mix just before serving else they turn soggy.
