Pav Bhaji Dosa: Fusion of south indian dosa with mumbai street food pav bhaji recipe.

Dosas are one of the most preferred breakfast option in South India and I love eating it anytime of the day. So I always have the dosa batter sitting in my refrigerator.
So if you are left with some bhaji and dosa batter, try this fusion dosa recipe of serving masala dosa with bhaji. I have prepared this Pav Bhaji in the Instant Pot pressure cooker.
I have also added mozzarella cheese and butter over bhaji while cooking the dosa. Try this recipe next time, I bet your family will love this combo and it gets ready in under 15 minutes.
How to make Pav Bhaji Dosa
- Make the tawa ready for making dosa, keep the stove on low flame and pour a ladle full of batter in the middle of the pan and spread in a circular motion to form dosa.
- Add some butter on top of dosa.
- Spread the leftover bhaji mixture (approximately ¼ cup) all over the dosa.
- Sprinkle onions, coriander leaves and grated cheese all over the dosa and cover it with lid and cook on low flame until cheese melts.
- Then turn off flame and let it roast for another minute until red and crispy.(optional).
- Eat pav bhaji dosa hot or else it will become soggy if you keep it for long. Serve it hot with coconut chutney and sambar.

Ingredients
- 4 tablespoon leftover Pav bhaji mixture
- ½ cup dosa batter
- 2 tablespoon onion finely chopped
- few coriander leaves finely chopped
- ¼ cup processed cheese/mozzarella
- 1 tablespoon butter/ghee
