Instant Pot Fettuccini Alfredo

Instant Pot Method:

  • Add water, salt to the Instant Pot. Mix well. Then add the dry fettuccini noodles. Most of the pasta should be covered in the water. If it is not, add some more water. 
  • Close the Instant Pot with pressure valve to Sealing. Cook on High Pressure for 4 minutes.
  • Using fettuccini noodles in this recipe which has 10 minutes for cooking on the stovetop. So to cook on Instant Pot – Divide the cooking time by half and minus one for al dente pasta. So it's 4 minutes. For softer pasta, do 5 minutes.
  • When the instant pot beeps, Wait 2-3 minutes and then Quick Release the remaining pressure manually. Open the lid, drain if there is any extra water.
  • Turn on Sauté mode. Stir in the alfredo sauce, black pepper, salt, and steamed broccoli, and mix everything well. Add more alfredo sauce if you want a more creamy texture. Cook for about 3-4 minutes, stirring in between.
  • When done, garnish with dried or fresh parsley and serve immediately.

Stovetop method with Homemade Alfredo Sauce:

  • Prepare pasta according to package. Drain and set aside. Reserve some pasta water.
  • Melt butter in a saucepan over medium heat. Add heavy cream and simmer for 3-4 minutes.
  • Next add garlic powder and cheese and whisk until all the cheese melts.
  • Add some steamed broccoli, cooked fettuccine pasta, pepper, salt and toss pasta in the sauce.
  • If sauce is too thick, then add the reserved pasta water gradually and finally sprinkle some parsley.

Notes:

  • Generally, The time to cook pasta in an instant pot is usually half of the suggested time on the pasta box and minus one for al dente pasta. Using penne pasta in this recipe which has 10 minutes for cooking on the stovetop. So to cook on Instant Pot – Divide the cooking time by half and minus one for al dente pasta. So it's 4 minutes.
  • Make sure you have enough water to cover most of the pasta underwater. Depending on the shape and size of pasta you may need more or fewer liquids.
