Ingredients

Measuring cup used 1 cup = 250 ml

  • 1 long english cucumber thinly sliced
  • ½ small onion thinly sliced
  • cup sour cream (or plain Greek yogurt)
  • 1 tablespoon fresh dill chopped (or 1 teaspoon dill weed)
  • 2 cloves garlic minced
  • juice of half lime (or 1 tablespoon distilled white vinegar)
  • salt and black pepper to taste
  • ½ teaspoon sugar (or stevia), optional

Instructions

  • Using mandoline or sharp knife thinly slice the cucumbers.

  • In a large bowl, whisk together the sour cream, fresh dill, minced garlic, lime juice, salt, sugar, and pepper.
  • Then add the sliced cucumber, onion, and toss the salad to combine. Adjust the seasoning at this stage.

  • Serve immediately or chill the salad until ready to serve.

Notes

Tips & Variations

  • Use a mandoline to get super thin slices of cucumber.
  • You can add any herbs like parsley, cilantro, chives, or green onion instead of dill.
  • If you do not have lime juice, use vinegar.
  • If you don't have sour cream at home, try replacing it with greek yogurt. Or use any combination of sour cream, greek yogurt, or mayonnaise.
  • You can also add other vegetables like tomatoes, bell peppers, avocado, shredded carrots to this salad.
