Rinse and peel the skin of the sweet potato using a vegetable peeler. (If you are using organic, then you may leave the skin if you prefer as it is perfectly edible.)After peeling, cut off the ends of the sweet potato and then cut it into half using a sharp knife as shown in the picture. Then place one portion vertically on the cutting board and cut all the way through the sweet potato, ½ inch apart. Then place each slice flat on the cutting board and make ½-inch cubes for even and quick cooking.
Transfer the sweet potatoes to a medium bowl. Add olive oil and season with garlic powder, salt, and pepper. Toss them well, so they are all coated with the seasoning.
Preheat the air fryer to 400°F (200°C). Add the seasoned sweet potatoes to the air fryer basket and spread them in a single layer (cook in batches if required).
Air fryer them at 400°F (200°C) for 10-12 minutes or until slightly brown and crisp. Shake the basket halfway through. Mine was cooked perfectly in 10 minutes.
Roasted Sweet Potatoes are ready. Remove in a serving plate, squeeze some lime juice and serve it immediately with a tasty dipping sauce on the side.
Oven Method:
Preheat the oven to 425°F. Transfer the diced sweet potatoes on a baking sheet. You can add oil and seasonings on the sheet tray itself.Spread them evenly in a single layer and cook for about 25-30 minutes, or until the potatoes are browning around the edges (time may vary based on the size of your cubes). You may have to turn them once halfway through.
