Wash and cut zucchini lengthwise, and then into thin half-moon slices
Take sliced zucchini in a bowl, add in besan, red chilli powder, turmeric, garam masala, coriander powder ,amchur powder and salt and mix well.
Heat oil in a pan or kadai, add in cumin(jeera) and let it crackle.Then add curry leaves and minced garlic and saute for another 30-40 seconds.
Add in onions and saute for 1 to 2 mins till onions turn light brown.
Then add in zucchini besan mix and mix well. Cover the pan with lid and cook for 4-5 minutes till zucchini is tender on medium low flame.
Once the zucchini is cooked, now increase the heat and brown the zucchini a little.Make sure besan is also cooked well.
Serve hot with roti, rice or eat as it is.
