How to Make Zucchini Besan Sabzi

Zucchini Besan Sabzi|Zucchini Besan Stir Fry is a quick and easy side dish where zucchini is coated with seasoned besan (gram flour/chickpea flour), stir fried until just tender and crunchy and gets done under 20 minutes.

Measuring cup (1 cup = 250 ml)


  • Wash and cut zucchini lengthwise, and then into thin half-moon slices
  • Take sliced zucchini in a bowl, add in besan, red chilli powder, turmeric, garam masala, coriander powder ,amchur powder and salt and mix well.
  • Heat oil in a pan or kadai, add in cumin(jeera) and let it crackle.Then add curry leaves and minced garlic and saute for another 30-40 seconds.
  • Add in onions and saute for 1 to 2 mins till onions turn light brown.
  • Then add in zucchini besan mix and mix well. Cover the pan with lid and cook for 4-5 minutes till zucchini is tender on medium low flame.
  • Once the zucchini is cooked, now increase the heat and brown the zucchini a little.Make sure besan is also cooked well.
  • Serve hot with roti, rice or eat as it is.


  1. For Jain version skip onion and replace garlic with hing (asafoetida).
  2. Zucchini slices should not be too thick or too thin.
  3. Zucchini contains 95% of water hence no need to add water while cooking, cook it on low flame.
  4. Zucchini can be replaced with broccoli.
