Spinach Corn Rice

Healthy and delicious Spianch corn rice cooked in a pressure cooker.

Ingredients

Measuring cup used 1 cup = 250ml

Instructions

Instant Pot Method

  • Press saute mode on Instant Pot. Add oil and once it's hot, add whole spices, cumin.
  • Then add sliced onions, ginger-garlic paste, green chilies. Saute for 2-3 minutes until they turn soft and light brown in color - stir regularly
  • Add spinach puree, corn, let it boil for 1-2 minutes.
  • Add rinsed basmati rice, water, turmeric powder, garam masala powder, and give a stir. Adjust water appropriately.
  • Close the Instant Pot with pressure valve to Sealing. Cook on High Pressure for 5 minutes.
  • Wait for Natural Pressure Release (NPR). BE CAREFUL OF THE HOT STEAM
  • Remove lid away from you, add lime juice and Mix well.
  • Spinach Corn Rice is ready. Serve with raita or plain yogurt.

Indian Pressure Cooker Method

  • Heat a pressure cooker with oil on medium flame, Add oil and once it's hot, add whole spices, cumin.
  • Then add sliced onions, ginger-garlic paste, green chilies. Saute for 2-3 minutes until they turn soft and light brown in color - stir regularly
  • Add spinach puree, corn, let it boil for 1-2 minutes.
  • Add rinsed basmati rice, water, turmeric powder, garam masala powder, and give a stir. Adjust water appropriately.
  • Close the lid place a whistle and cook for 2 whistles on medium flame.
  • After 10 mins add lime juice and fluff up the rice gently.
  • Spinach Corn Rice is ready. Serve with raita or plain yogurt.

Notes

  1. Take 2-3 cups of roughly chopped spinach or 1 big bunch of palak and blend with ½ cup of water.
  2. I have replaced green chilies with red chili powder in this recipe. You can also blend green chili along with palak (spinach).
