Cut open the pumpkin around the stem end with a sharp knife, scoop out the seeds out of the pumpkin.
Then put the mass of seeds and strings to a bowl filled with cold water and rinse them to separate seeds. You may also boil the seeds for 10 minutes to separate seeds from the pulp.
Then scatter the seeds on a paper towel and pat them very dry - this helps to make the pumpkin seeds crispier.
Air Fryer Method
In a medium bowl, drizzle some olive oil over the dried pumpkin seeds and season with garlic powder, salt, and pepper. Toss them well until well coated.
Preheat the air fryer to 360°F (182°C). Add the seasoned pumpkin seeds to the air fryer basket and do not overcrowd (cook in batches if required).
Air fry at 360°F (182°C) for 12-15 minutes or till they are perfectly roasted. Shake the basket couple of times during cooking to help them roast evenly. Mine was cooked perfectly done in 12 minutes.
Perfectly Roasted Pumpkin Seeds are ready. Adjust the seasonings if required and enjoy.
Oven Method
Preheat the oven to 400°F and line a baking sheet with parchment paper. Spread the seasoned pumpkin seeds evenly in a single layer. Bake at 400˚F for 15-20 minutes, until golden brown and crispy, tossing occasionally. Baking time depends on the size of the seeds
