  • Rinse brussels sprouts with water and pat dry with a kitchen towel. Using a sharp knife, trim off the bottom of the hard stem of each Brussels sprouts and then finely chop it.

  • Heat oil in a pan. Add mustard seeds and let them crackle.
    Then add green chilies, urad dal, curry leaves, hing and saute till the dals turn light brown.

  • Next add the chopped Brussels sprouts, turmeric, salt and stir-fry on medium low flame till they are soft and cooked.
    Turn off the gas and sprinkle shredded coconut and combine well.

  • Brussels Sprouts Thoran or Stir Fry is ready, serve with hot rice, chapatis, roti & parathas.
