Broccoli Paneer Mayo Sandwich

Ingredients

For Sandwich Spread:

  • ½ cup broccoli shredded
  • 2 cloves garlic minced
  • ½ cup crumbled paneer (cottage cheese)
  • 2 tablespoon mayonnaise
  • cheese as needed
  • salt to taste
  • black pepper to taste
  • 1 teaspoon oil

For Sandwich:

Instructions

  • Firstly, heat oil, add minced garlic and saute for a few seconds. Next, add the broccoli, salt saute for just 1-2 minutes till it's tender, and turn off the gas.
  • In a mixing bowl take sautéed broccoli garlic mixture, crumbled paneer, mayonnaise, black pepper powder, and salt. Mix well and keep aside. Note: Add more mayo if you desire.
  • Take bread slices and apply some butter first and then spread broccoli paneer mayo mixture generously on one slice of the bread.
    Then sprinkle some cheese on top (it's optional). Cover and press with another bread slice over it.
  • Heat tawa or sandwich maker, add butter. Now place the prepared sandwich and spread butter on top.
  • Grill or toast bread on both sides till golden brown and crisp.
  • Serve broccoli paneer mayo sandwich recipe hot with tomato ketchup.

Notes

Tips & Variations:

  • Use brown or multigrain bread for a healthier choice.
  • If you dont have mayonnaise replace it with cream cheese or hung curd.
  • Toast the bread on tawa or use a sandwich maker or grill to roast golden and crisp.
  • You can use oil instead of butter if you wish to for this broccoli mayonnaise sandwich.
  • Cheese is optional here, you can use any cheese of your choice I have used mozzarella cheese.
