Measuring cup used 1 cup = 250 ml

  • 2 cups cauliflower rice
  • 2 tablespoon peanuts(groundnuts)
  • ½ cup cauliflower stocks (optional)
  • 2 tablespoon ghee or coconut oil or butter(grass fed is better)
  • 1 teaspoon mustard seeds
  • 2 green chillies finely chopped
  • 1 sprig curry leaves
  • ½ teaspoon turmeric powder
  • 1 medium onions finely chopped
  • salt to taste
  • 2 tablespoon cilantro (coriander leaves) for garnish
  • 1 teaspoon lime juice

  • Firstly separate cauliflower into florets and stalks.Wash thoroughly.
  • Cut the cauliflower stalk into ½ inch cubes to resemble potatoes.
  • Grate florets with the help of grater or food processor to resemble fine rice or couscous.
  • In a large frying pan or kadai, heat up 2 tbsp of ghee(alternatively you can use 1 tbsp olive or coconut oil with 1 tbsp butter instead). Roast the peanuts till you get nice golden brown color and set aside.
  • In the same frying pan, add mustard seeds once they crackle, add the green chilli and curry leaves and saute for a few seconds.
  • Next add in the cauliflower stalks and cook till they are tender.
  • Add the onions and turmeric, season with some salt and cook till the onions become soft.
  • Add in the cauliflower rice, salt, tablespoon of water ,cover with a lid and cook on medium low heat for 2 to 3 minutes.Stir in between.
  • Once the cauliflower is cooked, remove from heat and garnish with roasted peanuts ,coriander and lime juice , mix well and serve hot.

  • You could also just buy cauliflower rice in the frozen section in Costco or Walmart and other supermarkets. I mostly prepare cauliflower rice at home an refrigerate for 2-3 days.
  • You can also use roasted peanuts from the store.
