Keto Poha (Cauliflower Poha)

Keto poha |Cauliflower Poha is made with cauliflower rice which are a fantastic, low carb, gluten free, nut free, vegetarian keto breakfast dish that can be prepared under 30 minutes.

Ingredients

  • 2 cups cauliflower rice
  • 2 tablespoon peanuts (groundnuts)
  • ½ cup cauliflower stocks (optional)
  • 2 tablespoon ghee or coconut oil or butter(grass fed is better)
  • 1 teaspoon mustard seeds
  • 2 green chilies finely chopped
  • 1 sprig curry leaves
  • ½ teaspoon turmeric powder
  • 1 medium onions finely chopped
  • salt to taste
  • 2 tablespoon cilantro (coriander leaves) for garnish
  • 1 teaspoon lime juice

Instructions

  • Firstly separate cauliflower into florets and stalks. Wash thoroughly.
  • Cut the cauliflower stalk into ½ inch cubes to resemble potatoes.
  • Grate florets with the help of a grater or food processor to resemble fine rice or couscous.

  • In a large pan, heat 2 tablespoon of ghee (alternatively you can use 1 tablespoon coconut oil with 1 tablespoon butter instead).
    Roast the peanuts till you get nice golden brown color and set aside.

  • In the same frying pan, add mustard seeds once they crackle, add the green chili and curry leaves, and saute for a few seconds.
  • Next, add in the cauliflower stalks and cook till they are tender.

  • Add the onions and turmeric, season with some salt, and cook till the onions become soft.
  • Add in the cauliflower rice, salt, tablespoon of water, and mix well.

  • Cover with a lid and cook on medium-low heat for 2 to 3 minutes. Stir in between.

  • Once the cauliflower is cooked, remove from heat and garnish with roasted peanuts, coriander, and lime juice, mix well. Serve hot.

Notes

Tips & Variations

  • You could also just buy cauliflower rice in the frozen section in Costco or Walmart and other supermarkets. I mostly prepare cauliflower rice at home and refrigerate it for 2-3 days.
  • You can also use roasted peanuts from the store.
