Press SAUTE mode on Instant Pot. Add oil to the POT. Once hot, add mustard seeds, cumin seeds, let them splutter
Next add green chili, curry leaves, and asafetida (hing). Saute for a few secs.
Add chopped onion and saute till onions turn light brown in color.
Next add purple cabbage, salt, water and mix well.Make sure to scrap of any spice if sticking to the pot.
Close the lid on the pot, and turn the valve from VENTING to SEALING position. Press the CANCEL button on Instant Pot.
Set the pot to MANUAL/PRESSURE COOK (High Pressure) and set the timer to 1 MINUTE. When the instant pot beeps, Do a QUICK RELEASE(QR) Remove lid away from you, add fresh shredded coconut and mix well.
Purple Cabbage Poriyal or Stir Fry is ready, serve with hot rice, chapatis, roti & parathas.
