Purple Cabbage Poriyal is a South Indian stir fry recipe prepared with purple cabbage, fresh coconut, and tempered with a few spices in Indian style. This stir fry goes best with rice and rasam or can be eaten as a salad. It is low carb, keto, vegan, and gluten-free.
What is Poriyal?
Poriyal, also known as thoran, is a South Indian coconut stir fry made with vegetables. You can also make this poriyal with cabbage, pumpkin, okra, and beets.
How to Make Purple Cabbage Poriyal in Instant Pot
Wash and shred the purple cabbage and keep it aside.
Instant Pot Method:
Press SAUTE mode on Instant Pot. Add oil to the POT. Once hot, add mustard seeds, cumin seeds, and let them splutter.
Next, add green chili, curry leaves, and asafetida (hing). Saute for a few seconds.
Add chopped onion and saute till onions turn light brown.
Next, add purple cabbage, salt, and water, and mix well. Make sure to scrape off any spice if sticking to the pot.
Close the lid on the pot, and turn the valve from the VENTING to the SEALING position. Press the CANCEL button on the Instant Pot.
Set the pot to MANUAL/PRESSURE COOK (High Pressure) and set the timer to 1 MINUTE. When the instant pot beeps, Do a QUICK RELEASE(QR)
Remove the lid away from you, add fresh shredded coconut, and mix well.
Purple Cabbage Poriyal or Stir Fry is ready, serve with hot rice, chapatis, roti & parathas.
Stovetop Pan Method
- Follow the same instructions till step 4 in a stovetop pot/pan and cook covered on medium-low heat. Stir 2-3 times in between for even cooking, and you can sprinkle water if required while stirring.
- Once the cabbage becomes tender, add fresh shredded coconut and mix well. Purple Cabbage Poriyal or Stir Fry is ready, serve with hot rice, chapatis, roti & parathas.

Purple Cabbage Poriyal Variations & Tips
- Try with other vegetables like beetroot, carrot, pumpkin, butternut squash, or chayote squash (chow chow).
- You can skip onions for this recipe.
- Use any cooking oil if you dont have coconut oil.
- You can also add urad dal for tempering.
- Do not overcook; let the veggies retain the crunchiness.
- If you are making this for a lunch box or for eating later, stir fry for 2 minutes on low flame after adding coconut. If you are consuming it immediately, there is no need to cook it after adding coconut.

Hi Bhavana,
Quick questions. I have a Mealthy Multipot electric pressure cooker (6 quart) which works just like the Instant Pot. The manual says that you should use at least 1 cup liquid (water, broth, etc.) while pressure cooking. Is it OK and safe to use less water, since you recommend 2 table spoons for this recipe? If I want to double or triple the recipe I am assuming I should double or triple the water too? What about the cooking time? Thanks much in advance.

Hi Neeta ,Thanks for visiting my website.Yes its ok to use less than a cup.Some instant pots show burn message when there is less water.But moisture in the cabbage itself along with 2 tbsp water was enough.When you can double or triple the recipe ,please increase the water accordingly but cooking time will remain the same.Hope this helps.Do let me know how it turns out.
Tip: if you get burn message with 2 tbsp water ..next time please increase accordingly
