Cucumber Cream Cheese Sandwich with Fresh Herbs

Cucumber Cream Cheese Sandwich is a classic English tea sandwich made with fresh cucumbers, cream cheese, fresh herbs, and seasonings. Perfect for afternoon tea, parties, picnics, or a light lunch.

Ingredients

  • 1 cup cream cheese (about 8 oz) softened
  • 2 tablespoons mayonnaise (or greek yogurt, sour cream)
  • 2 tablespoons coriander leaves chopped
  • 1 tablespoon mint leaves chopped
  • 2 tablespoons dill leaves chopped, (optional but recommended)
  • ¼-1/2 teaspoon garlic powder optional
  • salt to taste
  • pepper to taste
  • ½ teaspoon lime zest optional
  • 1 teaspoon lime juice
  • 2-3 medium Persian cucumber (or English cucumber)
  • 6-8 bread slices

Instructions

  • In a mixing bowl, combine softened cream cheesemayonnaise (or Greek yogurt)chopped coriander leaveschopped mint, and chopped dill (optional but highly recommended). Add garlic powder (optional), black pepper, and salt to taste. Stir in lime zest (optional) and lime juice. Mix well until smooth and creamy.
    Note: To soften cream cheese quickly, remove it from the foil wrapper and microwave for 10–15 seconds. Continue in 5–10-second intervals until soft and spreadable.

  • Cut the brown edges of the bread (optional).

  • Spread the herbed cream cheese mixture generously over both slices of bread. Arrange the cucumber slices evenly over one slice of bread.

  • Place the other bread slice on top and gently press down. Cut the sandwich into triangles or squares, as desired.

Notes

  • Pat the cucumber slices dry with a paper towel to remove excess moisture and prevent the sandwiches from becoming soggy.
  • For a traditional cucumber tea sandwich, soft white bread works well. However, you can use other breads like multigrain, brown, or sourdough.
  • You can make the herbed cream cheese spread in advance when preparing for a party or tea gathering and assemble the sandwiches just before your guests arrive. Any leftover cream cheese mixture can be stored in an airtight container in the refrigerator for 2–3 days.
  • If you dont have mayonnaise, substitute with Greek yogurt or sour cream or skip it.
