Oven-Roasted Aloo Gobi

  • If you don't have an air fryer at home, you can also make aloo gobi in the oven instead.
Preheat the oven to 425°F. Transfer the seasoned aloo gobi mixture to a baking sheet.
Spread them evenly in a single layer and cook for about 20-25 minutes, or until the edges are slightly browned and roasted (time may vary based on the size of your veggies). You may have to turn or shake them once halfway through.

Tips & Notes

  • Time to cook: The time to cook aloo gobi in the air fryer will depend on how you cut the potato & cauliflower. Chop the potatoes a bit smaller than cauliflower as cauliflower cooks faster than potatoes.
  • Don't overcrowd: Make sure to spread the aloo gobi mixture in a single layer in the air fryer basket to cook evenly. Cook in batches if needed.
  • Rinsing & drying: When you rinse and dry the veggies, you can leave some moisture in it, as it helps them to cook.
  • Shake the basket halfway: It's important to shake the basket halfway through to allow the vegetables to be cooked evenly.
  • Spices: Adjust the spices according to your taste. You can also add crushed kasuri methi (dried fenugreek leaves) to the stir fry once cooked, for a restaurant-style flavor.
  • Air frying time: The cooking time will vary based on the air fryer being used, so keep an eye on the cauliflower after the 12-minute mark.
