What is Aloo Gobi?

Aloo Gobi (Spiced Roasted Potatoes & Cauliflower) is a popular Indian vegetarian side dish originating from the North Indian Punjab region cooked with onions, tomatoes, and a blend of spices. Aloo translates to Potato, and Gobi (or Gobhi) means Cauliflower in Hindi.

Today I am sharing a healthier version of aloo gobi made with very less oil in the Instant Vortex Plus Air Fryer. Also, check my detailed post on Instant Pot & Stovetop version of making aloo gobi.

Ingredients to make Air Fryer Aloo Gobi

You will only need the following ingredients to make this air fryer aloo gobi masala recipe.

  • Potato (Aloo): I have used 2 small potatoes cut into ¾-inch pieces (about 1 cup). You may use any variety of potatoes for this recipe.
  • Cauliflower (Gobi): I have used 1 medium cauliflower head (about 1.2 pounds) cut into medium-sized florets (about 3 cups).
  • Onion: I have used 1 medium white onion, thinly sliced (about ¾-1 cup).
  • Tomatoes: I have used 1 medium Roma tomato, diced (about ½ cup).
  • Ginger-Garlic: used freshly minced ginger and garlic for the robust flavor.
  • Green Chili: I have used 1 Thai chili, you can increase or decrease it according to your preference.
  • Oil: I have used olive oil in this recipe, you can use any vegetable oil.
  • Dry spices: I have used turmeric powder, red chili powder, cumin powder, coriander powder, and garam masala. You can increase or decrease the spices according to your choice.
  • Lime Juice: Use freshly squeezed lime juice for the best flavor.
  • Coriander leaves: for garnishing.

How to make Roasted Aloo Gobi in Air Fryer

In a large mixing bowl, add cauliflower, potato, onions, tomato, green chili, minced ginger-garlic, oil, and all spices.

Preheat the air fryer to 380°F for 3-4 minutes.

Then spray the air fryer plate with little oil if you desire, and then spread the aloo gobi mixture in a single layer (don't overcrowd).

Air fryer at 380°F for 12-15 minutes. Shake the basket halfway through.

Squeeze some lime juice and garnish with coriander leaves. Serve hot.

Oven-Roasted Aloo Gobi

If you don't have an air fryer at home, you can also make aloo gobi in the oven instead.

  • Preheat the oven to 425°F. Transfer the seasoned aloo gobi mixture to a baking sheet.
  • Spread them evenly in a single layer and cook for about 20-25 minutes, or until the edges are slightly browned and roasted (time may vary based on the size of your veggies). You may have to turn or shake them once halfway through.

Serving Suggestions

Air-fried Aloo gobi can be enjoyed as a side dish with Indian flatbreads like roti, naan, paratha, or poori and cucumber raita.

You can also pair it with dal tadka, jeera rice, or basmati rice with salad on the side.

It can also be used as filling in wraps or tacos, along with some coriander mint chutney and pickled onions.

Storing & Reheating

Storage: You can store the leftovers in an airtight container in the refrigerator for up to 2-3 days.

Freeze: Yes, you can freeze aloo gobi in a freezer-safe zip lock or containers for up to 1-2 months.

Reheating: Reheat your Indian potato cauliflower stir fry in the microwave oven, or stovetop until they are warm throughout.

Tips & Notes for Indian Roasted Potatoes & Cauliflower

  • Time to cook: The time to cook aloo gobi in the air fryer will depend on how you cut the potato & cauliflower. Chop the potatoes a bit smaller than cauliflower as cauliflower cooks faster than potatoes.
  • Don't overcrowd: Make sure to spread the aloo gobi mixture in a single layer in the air fryer basket to cook evenly. Cook in batches if needed.
  • Rinsing & drying: When you rinse and dry the veggies, you can leave some moisture in it, as it helps them to cook.
  • Shake the basket halfway: It's important to shake the basket halfway through to allow the vegetables to be cooked evenly.
  • Spices: Adjust the spices according to your taste. You can also add crushed kasuri methi (dried fenugreek leaves) to the stir fry once cooked, for a restaurant-style flavor.
  • Air frying time: The cooking time will vary based on the air fryer being used, so keep an eye on the cauliflower after the 12-minute mark.

Ingredients
  

Measuring cup used 1 cup = 250 ml

  • 1 medium Cauliflower head (gobi) cut into florets (about 3 cups)
  • 2 small Potatoes (aloo) cut into ¾ inch pieces (about 1 cup)
  • 2-3 tablespoons Olive Oil
  • 1 tablespoon Ginger-Garlic minced
  • 1 Green Chili slit lengthwise
  • 1 medium Onion sliced, (about ¾-1 cup)
  • 1 medium Tomato diced (about ½ cup)
  • 1 tablespoon Lime juice (OR 1 teaspoon Amchur powder {Dry mango powder})
  • 2 tablespoons Coriander leaves for garnish

Spices

  • ½ teaspoon Red chilli powder
  • ½ teaspoon Turmeric powder
  • ½ teaspoon Cumin powder 
  • 1 teaspoon Coriander powder
  • ½ teaspoon Garam masala
  • Salt to taste

Instructions
