This Air Fryer Aloo Gobi is an easy and flavorful Indian-spiced dish made with potatoes, cauliflower, and spices. It’s vegan, gluten-free, and packed with taste!
Ever since I started cooking in my air fryer, I have enjoyed making Indian stir-fries like aloo gobi and bharwa bhindi (stuffed okra). The air fryer makes it quick, healthy, and perfectly crispy with minimal oil.
Aloo gobi (spiced roasted potatoes & cauliflower) is a popular Indian vegetarian side dish originating from the North Indian Punjab region, cooked with onions, tomatoes, and a blend of spices. Aloo translates to Potato, and Gobi (or Gobhi) means Cauliflower in Hindi.

Ingredients
- Potato (Aloo): I have used 2 small potatoes cut into ¾-inch pieces (about 1 cup). You may use any variety of potatoes for this recipe.
- Cauliflower (Gobi): I have used 1 medium cauliflower head (about 1.2 pounds) cut into medium-sized florets (about 3 cups).
- Onion: I have used 1 medium white onion, thinly sliced (about ¾-1 cup).
- Tomatoes: I have used 1 medium Roma tomato, diced (about ½ cup).
- Ginger and Garlic:Â use freshly minced ginger and garlic for a robust flavor.
- Dry spices: I have used turmeric powder, red chili powder, cumin powder, coriander powder, and garam masala.
How to Make Roasted Aloo Gobi in an Air Fryer
In a large mixing bowl, add 2 cups cauliflower florets, 1 cup potato (cubed), 1 medium onion (thinly sliced), 1 medium tomato (diced), 1 green chili (slit lengthwise), 1 tablespoon ginger-garlic (minced), 2-3 tablespoons oil, and the following spices.
- ½ teaspoon red chilli powder
- ½ teaspoon turmeric powder
- ½ teaspoon cumin powderÂ
- 1 teaspoon coriander powder
- ½ teaspoon garam masala
- salt to taste
Mix everything well.
Preheat the air fryer to 380°F for 3-4 minutes.
Lightly spray the air fryer plate with oil if desired, then spread the aloo gobi mixture in a single layer, ensuring not to overcrowd it for even cooking.
Air fryer at 380°F for 12-15 minutes. Shake the basket halfway through.
Squeeze 1 tablespoon lime juice and garnish with 2 tablespoons coriander leaves. Serve hot.
Oven-Roasted Aloo Gobi
If you don't have an air fryer at home, you can also make aloo gobi in the oven.
- Preheat the oven to 425°F. Transfer the seasoned aloo gobi mixture to a baking sheet.
- Spread them evenly in a single layer and cook for about 20-25 minutes, or until the edges are slightly browned and roasted (time may vary based on the size of your veggies). You may have to turn or shake them once halfway through.
Serving Suggestions
Air-fried aloo gobi makes a great side dish to pair with Indian flatbreads like roti, naan, paratha, or poori and boondi raita.
You can also pair it with dal tadka, jeera rice, or basmati rice with chickpea cucumber salad on the side.
It can also be used as a delicious filling for wraps or tacos, complemented by a zesty coriander mint chutney and laccha pyaaz (Indian onion salad).

- Storage: You can store the leftovers in an airtight container in the refrigerator for up to 2-3 days.
- Freeze: Yes, you can freeze it in a freezer-safe zip lock or containers for up to 1-2 months.
- Reheating:Â Reheat your potato cauliflower stir-fry in the microwave oven or stovetop until warm throughout.
Tips & Notes for Indian Roasted Potatoes & Cauliflower
- Time to cook: The time to cook aloo gobi in the air fryer will depend on how you cut the potato & cauliflower. Chop the potatoes a bit smaller than cauliflower, as cauliflower cooks faster than potatoes.
- Don't overcrowd: Make sure to spread the aloo gobi mixture in a single layer in the air fryer basket to cook evenly. Cook in batches if needed.
- Rinsing & drying: When you rinse and dry the veggies, you can leave some moisture in it, as it helps them to cook.
- Shake the basket halfway: It's important to shake the basket halfway through to allow the vegetables to be cooked evenly.
- Spices: Adjust the spices according to your taste. Adjust the spices to suit your taste. For a restaurant-style flavor, you can also crushed kasuri methi (dried fenugreek leaves) over the stir-fry once it’s cooked.
- Air frying time: The cooking time will vary based on the air fryer being used, so keep an eye on the cauliflower after the 12-minute mark.
