This super easy and delicious veg cream cheese sandwich is packed with cream cheese, vegetables, and a few seasonings. Enjoy them cold or as a grilled sandwich.
In a mixing bowl, add cream cheese, vegetables like carrot, bell pepper, cabbage, boiled sweet corn, Italian seasoning (dried mixed herbs), salt, and pepper.
Mix well and keep aside.
Cut the brown edges of the bread (optional).
Apply some butter to both slices of bread. You can skip this step if you prefer to go without butter.
Spread veg cream cheese mixture generously on one slice of bread.
Cover and press with another bread slice over it. Cut the sandwich into triangles/squares.Additionally, You can grill or toast the sandwich on both sides till golden brown and crisp.
Serve a vegetable cream cheese sandwich with tomato ketchup or green chutney.
Notes
Butter: Smearing butter on the bread acts as a moisture barrier, slowing down the transfer of moisture from the filling to the bread and preventing the bread from getting soggy. It's important not to skip this step.
Toast the bread: If you prefer your sandwich hot and crispy, toast it using a sandwich maker or on a tawa.
Cream Cheese: Leave the cream cheese at room temperature for about 30 minutes to 1 hour until it softens naturally. Alternatively, if you're short on time, microwave it in 10-15 second intervals, checking and stirring in between, until it softens. Be cautious not to melt it.
OtherVeggies: You can add other vegetables of your choice, like regular or spring onion, lettuce, and cucumber.
Green Chutney: You can also spread green chutney on the bread before adding the filling for a tangy twist.
AddProtein: You can also add crumbled paneer, or tofu for added protein.
Vegan: use vegan cream cheese and butter.
Mayonnaise: To make it extra creamy, you can add 1-2 tablespoons of mayonnaise to the cream cheese veggie mixture.
Cheese: If you like it extra cheesy, add shredded cheese like mozzarella, cheddar, or cheese slice in between, and then toast/grill the veg cream cheese sandwich if you like.
