While veg mayonnaise sandwich and curd sandwich are two of my daughter's all-time favorites, there's another sandwich recipe with the goodness of vegetables and ready in no time: the cream cheese sandwich.
It is an easy, delicious sandwich recipe made with cream cheese, fresh veggies, and Italian seasoning in it. You can grill it or have it as a cold sandwich, the choice is yours!
These sandwiches are an excellent choice for a quick meal at any time of day. They're versatile, be it for breakfast, snacks, kids' lunch box, picnics, parties, and more. They also make perfect afternoon tea sandwiches for tea parties. So, why wait? Let's get started with the recipe!

Here are the basic ingredients you will need to make a cream cheese veggie sandwich.
- Bread slices: Feel free to use any kind of bread, such as white milk bread, brown bread, multigrain bread, or sourdough bread.
- Cream cheese: You can use homemade or store-bought plain cream cheese. A good quality cream cheese, such as Kraft Philadelphia Cream Cheese, works best for this recipe. You can also use flavored cream cheese.
- Vegetables: I used carrots, capsicum/bell pepper, cabbage, and boiled sweet corn. You can add other veggies like onion, lettuce, cucumber, avocado, and celery.
- Seasonings: I used Italian seasoning, freshly ground black pepper & salt.
- Butter: Optional. It adds rich flavor to the sandwich. If you are a vegan, replace it with vegan butter or skip it.
How to Make Vegetable Cream Cheese Sandwich
In a mixing bowl, add ½ cup cream cheese, vegetables like ¼ cup carrot (shredded), ¼ cup bell pepper (finely chopped), ¼ cup cabbage (shredded), ¼ cup boiled sweet corn, ½ teaspoon Italian seasoning (dried mixed herbs), salt, and black pepper to taste.
Mix well and keep aside.
Cut the brown edges of the bread (optional).
Apply some butter to both slices of bread. You can skip this step if you prefer to go without butter.
Generously spread the vegetable cream cheese mixture on one slice of bread.
Cover and press with another bread slice over it. Cut the sandwich into triangles or square shapes.
Additionally, You can grill or toast the sandwich on both sides till golden brown and crisp.
Serve a vegetable cream cheese sandwich with tomato ketchup or green chutney.
Serving Suggestions
- Cream cheese sandwiches taste good as they are. However, you can pair it with chickpea salad or soups for a filling meal. They also go nicely with a side of french fries on the side.
- You can also serve it with avocado banana smoothie for toddlers and kids and coffee or masala tea for adults as a breakfast or evening snack.
Storage & Make-Ahead
Make ahead:Â Prepare the cream cheese veggie mixture a day in advance and store it in an airtight container in the refrigerator. When ready to serve, simply assemble the sandwich and enjoy!
If you're packing it for lunch box or travel, wrap it tightly in plastic wrap, parchment paper, or aluminum foil to keep it fresh.
Store: Cream cheese sandwich tastes best when consumed within a few hours of making it. However, you can wrap the sandwich tightly in aluminum foil or plastic wrap and store it in an airtight container in the refrigerator for up to 1 day. This will prevent the bread from drying out and keep the bread fresh.
Note: Certain veggies like cucumbers and onions can release water and make the sandwich soggy. It's best to add these vegetables just before assembling the sandwich.

- Butter: Smearing butter on the bread acts as a moisture barrier, slowing down the transfer of moisture from the filling to the bread and preventing the bread from getting soggy. It's important not to skip this step.
- Toast the bread: If you prefer your sandwich hot and crispy, toast it using a sandwich maker or on a tawa.
- Cream Cheese: Leave the cream cheese at room temperature for about 30 minutes to 1 hour until it softens naturally. Alternatively, if you're short on time, microwave it in 10-15 second intervals, checking and stirring in between, until it softens. Be cautious not to melt it.
Variations
- Other Veggies: You can add other vegetables of your choice, like lettuce, regular or spring onion, and cucumber.
- Cheese: If you like it extra cheesy, add shredded cheese like mozzarella, cheddar, or cheese slice in between, and then toast/grill the veg cream cheese sandwich if you like.
- Mayonnaise: To make it extra creamy, you can add 1-2 tablespoons of mayonnaise to the cream cheese veggie mixture.
- Add Protein: You can also add crumbled paneer, or tofu for added protein.
- Green Chutney: You can also spread mint coriander chutney on the bread before adding the filling for a tangy twist.
- Vegan:Â use vegan cream cheese and butter.
