Tips & Variations:
If the cucumbers are watery, place the slices on a tissue or paper towel for a few minutes to absorb the excess moisture. This helps prevent the sandwiches from becoming soggy.
If you’re packing the sandwiches for a lunch box, apply a little extra butter to the bread. This creates a barrier against moisture and helps prevent the sandwiches from becoming soggy.
If you don’t have green chutney, you can substitute it with pesto, cream cheese, or mayonnaise.
Use brown or multigrain bread for healthier choices.
You can prepare the green chutney weeks in advance and freeze it for later use.
You may also add shredded cheese to make a cucumber chutney cheese sandwich.
