When Dhwani (my daughter) asks for chocolate, I usually make something healthier, like chocolate chia pudding, avocado chocolate mousse, or chocolate zucchini bread. I often pack chocolate chia pudding and mango chia pudding for her school snack box.
Chia seeds are a great source of plant-based protein, fiber, and omega-3 fatty acids. Want more chia recipes? Try my almond butter chia toast, chia seeds curd rice, and strawberry chia jam.

Chocolate Chia Pudding Ingredients
- Cocoa Powder: Use high-quality cocoa powder, as this gives the pudding a rich chocolate flavor. You can also use cacao powder.
- Coconut Milk: I used canned light and unsweetened coconut milk. Shake the can well to ensure the cream is thoroughly mixed in. You can also use almond milk, soy milk, or full-fat dairy milk.
- Chia Seeds: The star ingredient! This helps to provide a thick pudding-like consistency.
- Sweetener: I used maple syrup to add sweetness. You can also use honey, agave, or sugar.
- Optional toppings: You can add any berries like raspberries, blueberries, and some shaved dark chocolate.
How to Make Chocolate Chia Seed Pudding
In a mixing bowl, add 1 cup of light coconut milk, 2 tablespoons cocoa powder, 4 tablespoons of chia seeds, and 2 tablespoons of maple syrup, and whisk it together until smooth.
Cover and refrigerate for about 15 minutes. Then, bring it out, give it a quick stir, and refrigerate it for at least 4 hours or overnight. If you find the pudding too thick after chilling, you can thin it out with a little extra milk before serving.
When you are ready to serve, garnish with fresh berries like raspberries and shaved chocolate. Enjoy!
Storage Suggestions
Chocolate coconut chia pudding can be stored in the fridge for about 4 to 5 days. It makes a great make-ahead breakfast or dessert.
Expert Tips
- When using canned coconut milk, choose light coconut milk. Full-fat coconut milk tends to make chia pudding very thick.
- Use the right liquid-to-chia seeds ratio to get the desired consistency. I always prefer to use a 1:4 ratio, meaning 1 part chia seeds and 4 parts of liquid.
- If you don’t like the chia pudding consistency and are looking for a smoother texture, you can blend all the ingredients together and set it in the fridge for a few hours to make chocolate chia pudding mousse.
Variations
- You can use milk of your choice, such as dairy, almond milk, almond milk, cashew milk, or oat milk.
- You can use cacao powder too.
- You can also garnish the pudding with nuts, coconut flakes, or any fruits of your choice.
