How to Cook Sweet Potatoes in an Instant Pot?
Estimate or measure the circumference of your sweet potatoes.
Firstly, wash and clean the sweet potatoes with water.
Add 1 cup of water into the Instant Pot insert (or 1.5 cups for an 8-quart Instant Pot). Place the trivet and then arrange the sweet potatoes.
Close the lid on the pot, and turn the pressure valve to the SEALING position. Set the pot to MANUAL/PRESSURE COOK (High Pressure).
The cooking times listed below in this recipe are what have worked best for me, in my 6-quart Instant Pot
Small sweet potato (4-inch circumference) – 12 minutes
Medium sweet potato (6-7 inch circumference) – 18 minutes
Large sweet potato(8-10 inch circumference) – 25 minutes
Very Large sweet potato (> 12-inch circumference) - 35 minutes
Once the instant pot beeps, wait for the pressure to release naturally and then open the lid. Check the doneness of sweet potatoes by inserting a knife or fork in the center.
Peel the skin and slice the sweet potatoes open, and gently mash the inside using a fork. Add some butter, and enjoy!

- Try to use the same-sized sweet potatoes. This will help to pressure cook evenly in the same amount of time.
- You do not need to pierce sweet potatoes using a fork for cooking in the Instant Pot.
- Try to use the trivet to keep the sweet potatoes away from sitting in the water. Cooking in the water will alter the texture and taste.
- Boiled Sweet Potatoes without peeling the skin can be stored in the refrigerator for up to 3 days.
