Making perfectly cooked or boiled beets (beetroot) in the Instant Pot pressure cooker is super easy and takes about 30 minutes. The exact cooking time will mainly depend on the size and variety of the beets.

How to Cook Beets in the Instant Pot
Firstly, wash and clean the beetroot with water.
Add water into the Instant Pot insert. Place the trivet and then arrange the beets. I have used medium-sized beets here.

Close the lid on the Instant Pot, and turn the pressure valve to the SEALING position.
Small Beets: MANUAL/PRESSURE COOK, HIGH, 10 minutes, natural pressure release.
Medium Beets: MANUAL/PRESSURE COOK, HIGH, 15 minutes, natural pressure release.
Large Beets: MANUAL/PRESSURE COOK, HIGH, 20 minutes, natural pressure release.
Once the instant pot beeps, wait for the pressure to release naturally, and then open the lid. Check the doneness of beets by inserting a knife or fork in the center.

Peel the skin and use it right away or store it without peeling in the refrigerator for later use.

Note: These times mentioned will result in perfectly cooked beets. If you want softer beets, then add 2 more minutes of pressure cooking.
What to Do with Boiled Beetroot?
Boiled beets can be used in a variety of Indian dishes. You can add them to beetroot chickpea salad, beetroot raita, beetroot paratha, beetroot carrot sandwich, or to make beetroot cutlets.
FAQs
The trivet accessory usually comes with the Instant Pot when you purchase it and is designed to keep ingredients out of the water. I suggest cooking or steaming large beets with the trivet because cooking in the water will alter the texture and taste.
However, you can boil the small or diced beets in water without the trivet.
Boiled beetroots without peeling the skin can be stored in the refrigerator for up to 3 to 4 days.
