These Roasted Pumpkin Seeds are healthy and perfectly seasoned snacks made in the air fryer. This recipe is vegan, gluten-free, nut-free, and vegetarian.

If you have pumpkin seeds after making jack-o-lanterns or cooking pie or bread, do not waste them, instead, season and roast them for a nutritious snack.
Pumpkin seeds are a great source of potassium, healthy fats, magnesium, protein, zinc, and iron.
I used my Instant Vortex Plus 6 Quart Air Fryer for this recipe. I love this because you can get the food in a single layer all at once, and dinner is ready in 30 minutes or less.
Roasted Pumpkin Seeds Ingredients
- Pumpkin Seeds – I have used store-bought pumpkin seeds in this recipe, but you can easily use the seeds from the pumpkin after the jack-o-lanterns.
- Extra-virgin olive oil – is ideal for roasting and helps to crisp up the pumpkin seeds.
- Spices – I have used garlic powder, salt, and pepper to give this air fryer roasted pumpkin seeds a nice flavor.
How to Roast Pumpkin Seeds in Air Fryer?
Harvesting Pumpkin Seeds
Cut open the pumpkin around the stem end with a sharp knife, and scoop out the seeds of the pumpkin.
Then put the mass of seeds and strings into a bowl filled with cold water and rinse them to separate the seeds. You may also boil the seeds for 10 minutes to separate seeds from the pulp.
Then scatter the seeds on a paper towel and pat them very dry - this helps to make the pumpkin seeds crispier.
In a medium bowl, drizzle some olive oil over the dried pumpkin seeds and season with garlic powder, salt, and pepper. Toss them well until well coated.
Preheat the air fryer to 360°F (182°C). Add the seasoned pumpkin seeds to the air fryer basket and do not overcrowd (cook in batches if required).
Air fry at 360°F (182°C) for 12-15 minutes or till they are perfectly roasted. Shake the basket a couple of times during cooking to help them roast evenly. Mine was cooked perfectly in 12 minutes.
Perfectly Roasted Pumpkin Seeds are ready. Adjust the seasonings if required and enjoy.
How to Roast Pumpkin Seeds in the Oven
Preheat the oven to 400°F and line a baking sheet with parchment paper. Spread the seasoned pumpkin seeds evenly in a single layer. Bake at 400˚F for 15-20 minutes, until golden brown and crispy, tossing occasionally. Baking time depends on the size of the seeds.

- Cook in batches. Make sure to lay the pumpkin seeds in a single layer in the air fryer basket without overcrowding, Cook in batches if needed.
- Shake the basket halfway: It's important to shake the basket halfway through to allow the seeds to be cooked evenly.
- Make sure to dry the pumpkin seeds with paper towels as they help make them more crispy.
- The exact cooking time will vary based on the air fryer being used.
