Zucchini is a versatile, low carb, and low-calorie vegetable perfect for soups, pasta, roasting, cakes, stir-fries, or side dish.
Ingredients
You will only need a few easy-to-find ingredients to make this easy air fryer zucchini chips recipe.
- Zucchini – 2 medium zucchini sliced into rounds (3-4 mm thickness). You don't have to peel the skin.
- Besan (gram flour) - Use fresh, good quality besan. It is gluten-free and easily available in Indian grocery stores. It is much finer than the chickpea flour available in US grocery stores. Besan is used to make popular dishes like pakodas, besan chilla, and besan ladoo in India. If you can't find besan then replace it with corn starch or all-purpose flour.
- Spices – Added garlic powder, red chili powder, cumin powder, salt, as basic spices for seasoning the chips.
- Panko - I used store-bought panko bread crumbs in this recipe. Use gluten-free panko to make this 100% gluten-free dish.
- Olive oil – is used for roasting and helps to crisp up the zucchini chips to a golden brown. You may also use avocado or grapeseed oil.
How to Make Zucchini Chips in the Air Fryer
Wash the zucchini and cut them into thin slices. Do not peel the skin.
Add besan (gram flour), red chili powder, turmeric powder, garlic powder, cumin powder, and salt in a wide bowl.
Now add the water little by little and make a smooth batter with a whisker or hand. The batter should be similar to pancake/dosa batter consistency, not too thick or watery.
Combine the panko bread crumbs, salt on another plate, and mix well.
Dip each zucchini slice in the besan batter, and then place the zucchini in the panko and coat lightly on both sides. Repeat with the remaining zucchini slices.
Tip: To make this mess-free and easy, I recommend having a wet and dry hand. Use the wet hand for dipping zucchini slices in the batter and transfer them to the panko mixture. Then the dry hand sprinkle panko on both sides of the slices and place them on the tray.
Place the coated zucchini chips in a tray.
Preheat the air fryer to 360°F (182°C). Add the zucchini slices to the air fryer's basket and spread them in a single layer (cook in batches if required)—brush or spray chips with cooking oil spray.
Air fryer them at 360°F (182°C) for 12-14 minutes or until they're golden brown and crisp. Shake the basket halfway through. Roasting time may vary depending on the type of air fryer, and the thickness of the zucchini slices.
Serve it hot immediately with your favorite dipping sauce.
