Barbeque Nation-style Cajun Potatoes are a must-try dish, loved for their crispy texture and creamy Cajun-spiced flavor. It is one of the most popular food items we love to have whenever we visit the Barbeque Nation Restaurant chain in India. This restaurant-style recipe can be easily made at home with the same delicious taste.

I wanted to try making crispy Cajun-spiced potatoes at home after my husband and I fell in love with them during our first visit to Barbeque Nation Restaurant in Bangalore. After searching for the recipe online, I decided to recreate it, relying on the flavors and texture we remembered.
It's very easy to make if you have some baby potatoes, mayonnaise, and Cajun seasoning at home. I usually make Cajun spice mix at home and store it in an airtight container for up to 3 months. However, if you're short on time, you can easily find ready-made Cajun spice mixes in stores.
Here is an easy recipe for Cajun Spice Mix
- 1 teaspoon garlic powder
- ½ teaspoon dried oregano
- 1 teaspoon onion powder
- ½ teaspoon ground black pepper
- ½ teaspoon dried thyme
- 1 teaspoon red chili powder (paprika)
- salt to taste
I have shared both the Air fryer and Shallow fry methods. You can also deep fry the potatoes. For this recipe, the potatoes should be really crispy. This is an easy-to-make, delicious appetizer for any small get-together or party, and it is always a hit among my family and friends.

How to Make Barbeque Nation Style Cajun Potatoes
Making the Cajun Mayonnaise Dressing
Firstly, in a bowl, mix the following ingredients together:
- 4 tablespoons mayonnaise (i used eggless)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder, optional
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- ½ teaspoon ground black pepper
- 1 teaspoon red chili powder
- 1 teaspoon tomato ketchup
- Salt to taste
Set aside. You can add 1-2 tablespoons of milk if the dressing is too thick. I usually add milk to get the right consistency.
Preparing the Potatoes
Scrub 10-12 baby potatoes to get rid of any dirt. Cook the baby potatoes with skin till just tender (90% cooked). You can either use
Instant Pot - 'MANUAL / PRESSURE COOK' for 4 minutes on HIGH and quick release manually. Here is the detailed recipe for Instant Pot Baby Potatoes.
Stovetop Pressure Cooker - Cook for 1 whistle.
Microwave - For 5 minutes or till tender.
Stovetop Pot - Boil the potatoes for 10-15 minutes.
Finally, drain the water and let the potatoes cool.
Now place the potatoes on a chopping board and gently press each baby potato with the bottom of a glass, or a small bowl, until the skin splits (do not break).
Sprinkle about 2 tablespoons of cornflour over the potatoes and toss them gently to ensure an even, light coating on all sides.
Shallow Fry Method
In a shallow pan, heat some oil over medium-high heat and shallow fry the coated baby potatoes until they turn crispy and golden brown. Alternatively, you can deep fry them for an extra crunch.
Air Fryer Method
Preheat your air fryer at 395°F (200°C).
Spray or brush the air fryer basket with oil so the potatoes don’t stick. Now, place the coated baby potatoes into a single layer. Brush some oil on top of the potatoes.
Air fry at 395°F (200°C) for 16 minutes or until the potatoes start browning and turn crispy. Flip them halfway through, and spray some oil on the top.
Once the potatoes are crispy and golden brown, take them onto the plate.
Finally, arrange the crispy potatoes on a serving plate. Drizzle a generous amount of Cajun mayonnaise dressing and garnish with 2 tablespoons of finely chopped onions and 1 tablespoon of coriander leaves.
Serve crispy, creamy cajun spiced potatoes immediately.

Serving Suggestions
You or your kid can enjoy these spiced cajun potatoes as an appetizer or also serve them along with this delicious mayonnaise sandwich and call it a meal.
Expert Tips
- I highly recommend keeping the skin on, as it helps make the potatoes crispier.
- Don't overcook the potatoes.
- You can also use a store-bought cajun spice mix.
- Cajun spice mix: You can make this a month in advance and store it in an airtight container at room temperature.
- Cajun mayo dressing should be added over the potatoes just before serving, or else they will turn soggy.
Variations
- Instead of baby potatoes, regular potatoes can be quartered and used. I highly recommend using baby potatoes for this recipe.
- You can also use frozen potato tots (tater tots), air fry or shallow fry, and drizzle the Cajun mayo dressing.
FAQs
I highly recommend using mayonnaise, as that is what is used in Barbeque Nation Restaurant. If you don't have mayonnaise, then use sour cream or Greek yogurt.

Tastes better with Airfryer or shallow fry?
Bhavana Patil
I dint see much difference in the taste with airfryer and shallow fry potatoes..If you are not counting on calories go for shallow fry 🙂
Ramya
If we are using store bought cajun spice mix, how many spoons should be added?
bhavana
Cajun Spice Mix is readily available in the market and just mix 4 tablespoon of mayonnaise, 1 teaspoon of tomato ketchup with 2 tablespoon of cajun spice mix.Hope this helps.Add extra if you need more seasoning.

Loved the recipe.
Only thing I will change is instead of just sprinkling the cornflour on top,I would make a slurry and dip the potatoes in it.
bhavana
Hi Neha Yeah dipping in flour slurry is a also a good idea..for me sprinkling some flour and shallow fry has always worked for making the potatoes crispy. Thanks for sharing the idea.
