As the name suggests, Clear Soup is a light, thin-consistency, broth-based soup made with a lot of veggies and clear vegetable broth. It is not thickened with cornstarch, cream, or other dairy products. It is commonly served in Indo-Chinese restaurants in India.
It is made with many vegetables and has very little spice. The flavor of this soup is quite calming and comforting, making it perfect for chilly winter days. Low in calories, it makes an excellent addition to your weight loss diet, much like lemon coriander soup.

Clear Vegetable Soup Recipe Ingredients

- Fresh Veggies: You can use seasonal veggies or whatever you have on hand, like mushrooms, broccoli, carrots, cabbage, yellow onion, ginger, and garlic. Other veggies that go well are celery, sweet corn, bell pepper, and zucchini.
- Vegetable Broth (or water): I used homemade vegetable broth, but feel free to use low-sodium store-bought vegetable broth or simply use water.
- Lemon Juice: Use freshly squeezed lemon or lime juice for the best flavor.
- Seasonings: salt and pepper.
How to Make Vegetable Clear Soup
Heat 1 teaspoon olive oil in a pan over medium-high heat. Once the oil is hot, add ½ teaspoon minced ginger and ½ teaspoon of minced garlic, and saute for 30 seconds or until aromatic.
Next, add ¼ cup of chopped spring white onions and saute for a minute.

Add ½ cup thinly sliced mushrooms and saute for around 2 minutes till the mushrooms sweat.
Then add mixed vegetables like ¼ cup broccoli florets, ¼ cup carrot (thinly sliced), and ½ cup cabbage (roughly chopped), and saute for 1-2 minutes.

Then add 4 cups of vegetable broth (or water), salt, and black pepper to taste, and bring it to a boil. Simmer the soup for 6-8 minutes on medium-low heat until the veggies turn soft. At this stage, turn off the gas flame.

Then add 1 tablespoon lemon juice, garnish with 2 tablespoons spring onion greens, and mix well. Adjust seasoning at this stage.
Serve the vegetable clear soup recipe piping hot.

Serving Suggestions
This vegetable clear soup is great on its own, or you can pair it with a side of bread, or almond butter toast, and a fresh sprouted moong salad.
Clear soups also go very well with vegetable hakka noodles or vegetable fried rice.

Storage Suggestions
- Refrigerator: Store the leftovers in the refrigerator for up to 2-3 days in an air-tight container.
- Freezer: Let the soup cool completely, then freeze the soup in a freezer-safe container without adding spring onion greens for up to one month.
- Reheating: You can reheat it in the microwave or on the stovetop until warm through. If frozen, thaw it overnight in the refrigerator and reheat it in the microwave or on the stovetop.

- Use vegetable Broth: Using a good-quality vegetable broth will add a lot of flavor to the soup.

- Add protein: Adding some cubed tofu, seitan, steamed edamame is a great way to include plant-based protein in your diet.
