Ingredients for Lemon Coriander Soup Recipe
- Fresh Veggies: You can also use seasonal veggies or whatever you have on hand, like broccoli, carrots, cabbage, yellow onion, ginger, and garlic. Other veggies that go well are sweet corn, bell pepper, zucchini, and peas.
- Vegetable Stock (or water): Try using the low-sodium store-bought vegetable broth for the best flavor, or simply use water.
- Corn Starch: used to make a slurry to thicken the soup.
- Herbs: I have used coriander leaves. You can also use coriander stems, which give a nice flavor. You may also add fresh parsley, thyme, or rosemary.
- Seasonings: salt and pepper.
- Lemon Juice: Use freshly squeezed lemon or lime juice for the best flavor.
How to Make Lemon Coriander Soup
Heat olive oil in a saucepan over medium-high heat. Once the oil is hot, add ginger, garlic, green chilies, and saute for 30 secs.
Next, add onions and saute till they turn translucent.
Add mixed vegetables, saute for 2 minutes until the veggies are tender, and then add vegetable stock (or water), salt, and black pepper and bring it to boil.
In a small mixing bowl, combine one tablespoon of cornflour and ¼ cup of water. Mix until there are no lumps.
Add the cornflour slurry and bring the soup to a rolling boil. The soup would thicken a bit. At this stage, turn off the gas flame.
Then add the lime juice and coriander (cilantro) and mix well. Adjust seasoning at this stage.

Tips & Variations
- Add lemon juice after turning off the flame else, it will turn bitter.
- Add coriander leaves after turning off the flame, else, it may turn black.
- You can also add vegetables of your choice like green beans, peas, sweet corn, bell pepper, and zucchini. Also, fresh herbs like thyme, parsley, and rosemary make it a healthy and flavorful soup.
- Adding cornflour slurry will give a slightly thick consistency. However, it is optional.
- You can also add a stem of coriander gives a nice flavor to the soup.

Yes! you can replace vegetable stock with water. But I highly recommend using low sodium vegetable stock, which gives the best flavor to the soup.

Ingredients
Measuring cup used 1 cup = 250ml
- 2 tablespoon lemon juice OR juice of one lime
- ¼ cup coriander leaves (cilantro) finely chopped
- 1 teaspoon oil
- 3 cloves garlic minced
- ½ inch ginger grated
- 1 green chilies finely chopped
- ½ cup onion finely chopped
- ¼ cup carrot finely chopped
- ¼ cup cabbage finely chopped
- ¼ cup broccoli finely chopped
- 3 cups vegetable stock (or water)
- 1 tablespoon corn flour mixed in ¼ cup of water (optional)
- salt & pepper to taste

Loved the soup. Added in some spinach as well. Added the spinach and broccoli florets at the end (added the broccoli stems earlier). Made with water. Skipped the corn flour slurry step. Liked it soupy
