These easy air fryer roasted potatoes are crispy and golden on the outside and tender inside. They’re perfect as a side dish or a snack.

At home, we absolutely love potatoes in all forms—whether it’s masala french fries, South Indian potato fry, or spicy bombay potatoes. Today, I’m sharing an easy side dish: Air Fryer Roasted Potatoes, perfectly seasoned and incredibly delicious! They’re perfect for a busy weeknight or festive holidays like Christmas Day and Thanksgiving. You may also enjoy my air fryer roasted sweet potatoes.

Ingredients for Roasted Potatoes Recipe
- Potatoes - I used baby potatoes. Red potatoes, Yukon Golds, and russet potatoes are all great for roasting.
- Extra-virgin olive oil - is ideal for roasting, adds richness, and helps to crisp up the potatoes in the air fryer. You may also use avocado or grapeseed oil.
- Garlic - Freshly minced or ½ teaspoon of garlic powder.
- Spices - red chili powder (or smoked paprika, cayenne), Italian seasoning, onion powder, salt, and pepper.
- Cheese - Use can add finely shredded parmesan cheese for the best texture and flavor before roasting. This is optional I did not add to this recipe.
- Chopped Parsley/Cilantro - This is optional and is for garnish.
How to Make Air Fryer Roasted Potatoes
Firstly, rinse and scrub the potatoes thoroughly. If using baby potatoes, then cut them in half. If they’re tiny baby potatoes, then poke them with your fork to allow steam to escape. In case if using larger potatoes, just cut them into 1-inch pieces.
Toss the baby potatoes with olive oil and seasonings like minced garlic (or garlic powder), Italian seasoning, red chili powder, salt, and pepper. Make sure that the potatoes are well coated in oil and seasonings. Use your hands to mix if needed.
Preheat the air fryer to 400°F (204°C). Add the seasoned baby potatoes to the air fryer basket and spread them in a single layer (cook in batches if required).
Air fryer them at 400°F (204°C) for 14-16 minutes or until golden brown and tender. Shake the basket halfway through. Mine was cooked perfectly in 14 minutes.
The roasted potatoes are ready. Remove to a serving plate, garnish with freshly chopped parsley with a tasty dipping sauce like sriracha mayo or sour cream dip on the side.
How to Roast Potatoes in the Oven
Preheat the oven to 425°F. Spread the seasoned potatoes evenly in a single layer.
Cook for about 30-35 minutes or until golden brown and tender. You may have to turn them once halfway through. Cooking time may vary based on your oven and the size of the potatoes.
Serving Suggestion
Serve your roasted potatoes alongside a plate of creamy tomato pasta or spinach pasta for a complete meal.
Pro-Tips & Notes
- Pick potatoes that are similarly sized: This helps for even, faster cooking. If you can't find baby potatoes, then cut the regular potatoes into 1-inch pieces.
- Work in batches. Make sure to spread the potatoes in a single layer in the air fryer basket, leaving some space between each other. Cook in batches if needed.
- Shake the basket halfway: It's important to shake the basket halfway through to allow the cauliflower florets to be cooked evenly.
- Serve them right away: These crispy roasted potatoes get soft as they sit and cool.
- No need to boil the potatoes before air frying.
- Peeling potatoes is optional, hence clean and scrub potatoes before using.
- If you are using starchy potatoes, soak them in water for 15-20 minutes before roasting to get rid of extra starch. Also, make sure to pat them dry with a kitchen towel, or else they won't roast crisp.
- The exact cooking time will vary based on the air fryer being used.
