You will only need a few basic ingredients to make this air fryer sweet potato cubes recipe.
- Sweet Potatoes - Choose orange and red-skinned potatoes that are firm without any soft spots. Peel and cut the sweet potatoes into ½-inch cubes for even and quick cooking. You may also keep the skin if you prefer. In some grocery stores in the US, sweet potatoes are incorrectly labeled as Yams, even though they are distinctly different vegetables.
- Extra-virgin olive oil – adds richness and is ideal for roasting to soften and brown. You may also use avocado or grapeseed oil.
- Spices – garlic powder, kosher salt, and pepper give this air fryer roasted sweet potatoes a nice twist, making them sweet and savory. You may also add some paprika and cumin powder.
How to Make Roasted Sweet Potatoes in an Air Fryer
How to Cut Sweet Potatoes for Roasting
Rinse and peel the skin of 2 large sweet potatoes (about 1 pound) using a vegetable peeler. (If you are using organic, then you may leave the skin if you prefer, as it is perfectly edible.)
After peeling, cut off the ends of the sweet potato and then cut it into half using a sharp knife, as shown in the picture.
Then place one portion vertically on the cutting board and cut all the way through the sweet potato, ½ inch apart.
Then place each slice flat on the cutting board and make ½-inch cubes for even and quick cooking.
Transfer the sweet potatoes to a medium bowl. Add 1 tablespoon extra virgin olive oil and season with ½ teaspoon garlic powder, ¼ teaspoon salt, and ⅛ teaspoon pepper. Toss them well, so they are all coated with the seasoning.
Preheat the air fryer to 400°F (200°C). Add the seasoned sweet potato cubes to the air fryer basket and spread them in a single layer (cook in batches if required).
Air fry them at 400°F (200°C) for 10-12 minutes or until slightly brown and crisp. Shake the basket halfway through. Mine was cooked perfectly in 10 minutes.
Roasted Sweet Potatoes are ready. Remove to a serving plate, squeeze some lime juice, and serve it immediately with a tasty dipping sauce on the side.
How to Roast Sweet Potatoes in the Oven
Preheat the oven to 425°F. Transfer the diced sweet potatoes to a baking sheet. You can drizzle some oil and add seasonings to the sheet tray itself. Gently mix everything with your hands.
Spread them evenly in a single layer and cook for about 25-30 minutes, or until the potatoes are browning around the edges (time may vary based on the size of your cubes). You may have to turn them once halfway through.
