Instant Pot Ghee Rice|Restaurant Style Ghee Rice

Ingredients
  1. measuring cup used ,1 cup = 250 ml
  2. 2 tablespoon, Ghee/Clarified Butter
  3. 1 cup,Basmati Rice
  4. 1-2,bay leaf
  5. 2 sticks, Cinnamon
  6. 2-3,Cardamom
  7. 2-3,Cloves
  8. ½ inched, chopped ginger
  9. 2-3, slit green chillies
  10. 10-15, raisins
  11. Few, cashew nuts
  12. 2 medium ,sliced Onions
  13. 2 cups,water
  14. Salt
INSTANT POT Method
  1. Press saute mode on Instant Pot. Add ghee and once it's hot add Bay leaf,Cinnamon sticks, Cardamom, Cloves.
  2. Fry for 30 secs(till aromatic).
  3. Then add chopped ginger, green chillies, raisins, cashew nuts, sliced onions
  4. Saute for 2-3 minutes until translucent -stir regularly
  5. Add salt to speed up the process of cooking
  6. Add Basmati Rice,water and give a stir .
  7. Press CANCEL button on Instant Pot
  8. Close the lid on the pot, and turn valve from VENTING to SEALING position.
  9. Set the pot to MANUAL/PRESSURE COOK (High Pressure) and set timer to 5 minutes
  10. Wait for natural pressure release (NPR) (Wait until silver button on lid drops).BE CAREFUL OF THE HOT STEAM
  11. Remove lid away from you,garnish with cashew nuts,raisin.
  12. Ghee Rice is ready.
Indian Pressure Cooker Method
  1. Heat ghee in a pressure cooker on medium heat and once it's hot add Bay leaf,Cinnamon sticks, Cardamom, Cloves.Saute for 30 seconds(till aromatic)
  2. Then add chopped ginger, green chillies, raisins, cashew nuts. Saute for another 30 secs.
  3. Add sliced onions and add salt to speed up the process of Cooking.
  4. Saute for 2-3 minutes until onions turn translucent.
  5. Add Basmati Rice,water and stir well.
  6. Close the lid of the cooker ,Pressure cook it for 2 whistles on medium heat
  7. When it is cooled,fluff the rice.
  8. Ghee Rice is ready
Notes
  1. 1. Ghee rice tastes better when basmati Rice(Long grain rice) is added.
