This 4 Ingredient Homemade Strawberry Chia Seed Jam recipe is so easy to make in an Instant pot pressure cooker and is healthy, plus doesn't use Pectin. Yields one 16-Ounces jar of jam.
It's strawberry season, we went for strawberry picking at Watsonville, CA, and got a few pounds of fresh red and juicy strawberries. I froze some berries for later use in making smoothies and used up the remaining to make this easy, freezer-friendly homemade strawberry jam.
This jam is made without any preservatives or pectin. So the addition of lime juice is very important to prevent bacterial growth. Because we're not canning the strawberry jam and just keeping it in the fridge, it is good for around 2-3 weeks – but honestly, it doesn't last more than 2-3 days at our home.
You can enjoy some jam on toast with a cup of coffee or top it on with greek yogurt, rice pudding, sandwich, or crepes. Also, check this homemade Pineapple Jam recipe made in the Instant Pot.
You can easily double and triple this strawberry chia jam recipe and share it with your friends, who will all love it. If you make this Strawberry Jam with Chia seeds, Don't forget to give your feedback in the comments section. Happy jamming!

All you need for this recipe are four simple ingredients.
- Fresh Fruit: I have used fresh organic strawberries.
- Chia Seeds: Just 2 tablespoons of whole chia seeds.
- Choice of Sweetener: I am using granulated sugar in this recipe, but you can also use maple syrup, honey, or any other sweetener. For the Keto version, use erythritol or monk fruit.

How to Make Strawberry Chia Jam in Instant Pot
Firstly, wash, hull, and slice the strawberries into halves.
Then add the strawberries, sugar, and lemon juice to the Instant Pot and stir well.
Close the lid and let the strawberries sit for at least 30 minutes. This process helps the strawberries release their juices.
Note: Lemon Juice is naturally rich in pectin, which helps set the jam.
Then after 30 minutes, Set the pot to MANUAL/PRESSURE COOK (High Pressure) and set the timer to 1 minute.
When the instant pot beeps, let the pressure release naturally. Open the lid.
Use a potato masher or immersion blender to puree the fruit until the desired consistency (I kept mine chunky).
Next, select the SAUTE mode and mix in the chia seeds.
Bring the mixture to boil for about 5 minutes while stirring continuously until the jam reaches the required gel-like consistency. The jam also will continue to thicken as it cools.
Once the jam has cooled to room temperature, transfer it to a jar. Yields one 16-Ounces jar of jam. Instant Pot Strawberry Chia Jam recipe is ready to be served.

If changing fruit form say strawberries to blueberries, do you leave the quantity at 4 cups? This looks like an awesome recipe to use on a multitude of different fruits.
Thanks
George
