Today I'm sharing my favorite variation of Maggi, Spicy Vegetable Masala Maggi or Maggi Masala Noodles made in the stovetop and Instant pot pressure cooker. This Mumbai Street Style Veg Masala Maggi recipe is a new way to add colorful vegetables and a few spices to the regular Maggi recipe and make it into a healthy dish.

This Maggi Instant Noodles recipe is India's most loved instant noodles food. People of all age groups love it, be it kids or adults. It is the perfect snack recipe to curb those late-night hunger pangs or when you are too lazy to cook lunch or dinner. Although Maggi is not the healthiest option, eating it occasionally is okay. I have made many healthier versions like Spinach Corn Maggi and Paneer Maggi, and my daughter loves these variations. So today, I am sharing an easy Maggi recipe with Vegetables.

I always use a stovetop pot to make Maggi, but ever since, I have been using my electric pressure cooker, Instant Pot DUO60 6 QT, and making Maggi even easier. It comes out perfect every time.
Maggi Noodles Recipe Ingredients
You will need the following ingredients to make this easy veg maggie recipe.
- Maggi Noodles: You will need two packets of Maggi Noodles with Maggi masala tastemaker, which are along with it.
- Onion and Tomato: I have used 1 each onion and tomato.
- Mix Vegetables: Add vegetables of your choice, like capsicum (bell peppers), sweet corn, carrot, green peas, and green beans.
- Ginger and garlic: I used homemade ginger garlic paste. You can also mince them and add them.
- Spices: I used red chili powder, garam masala powder, and chaat masala.
- Butter or oil: Use any vegetable oil for this Maggi. You can also use butter instead of oil.
- Fresh coriander: for garnishing
How to Make Vegetable Masala Maggi
Heat butter or oil in a pan. Add ginger-garlic paste, onion, and sauté till the onions are soft.
Next, add tomatoes, mix vegetables, and stir-fry on high flame till they are 90% cooked, and they still have slight crispiness left.
Then add water, maggi masala, red chili powder, garam masala powder, and mix well.
Bring water to boil, add Maggi noodles, close the lid, and cook for 2-3 minutes or until water is absorbed. Stir in between.
Finally, sprinkle chaat masala and switch off the flame.
Garnish with chopped coriander leaves and serve Maggi noodles recipe hot.
Vegetable Masala Maggi Instant Pot Method
- Firstly, press SAUTE on the Instant Pot. Heat butter or oil. Add ginger-garlic paste, onion, and sauté till the onions are soft.
- Next, add tomatoes, mix vegetables, and saute the vegetables for a minute or two.
- Then add water, Maggi seasoning, noodles, red chili powder, garam masala powder, and mix well. Make sure to deglaze the pot.
- Furthermore, Close the Instant Pot with the pressure valve to Sealing. Cook on High Pressure for 2 minutes.
- Once the pot beeps, do a QUICK RELEASE.
- Remove the lid away from you, Finally, sprinkle chaat masala and garnish with chopped coriander leaves. Serve Vegetable Masala Maggi hot!
Variations
- Other Veggies: You can add vegetables of your choice, like broccoli, and sweet corn.
- Spices: Adjust the spices according to your preference.
- Cheese: You can also add some cheese on top to make Mumbai Street Style Veg Masala Maggi.

Measuring cup used ,1 cup = 250ml
- 2 packets Maggi Noodles (70 Gms x 2)
- 2 Number Maggi masala tastemaker (Available in Maggi packet itself)
- 2 cups water
- 1 medium onion finely chopped
- 1 medium tomato finely chopped
- ½ cup mix vegetables (capsicum,corn,carrot,peas or any other vegetable of your choice)
- 1 teaspoon ginger garlic paste optional
- ¼ teaspoon red chilli powder
- ¼ teaspoon garam masala
- a pinch chat masala powder
- a pinch salt while cooking vegetables
- 2 tablespoon butter Or oil
- 1 tablespoon fresh coriander chopped
Instructions
Stovetop Pot Method:

Add garam masala. Nowadays maggi masala packets are available in the market so instead of garam masala, you can buy extra maggi masala and add it to the maggi noodles recipe .
