Vegetable Masala Oats Khichdi recipe is a healthy, nutritious one-pot meal made with rolled oats, moong dal, vegetables, and Indian spices. It makes perfect lunch or dinner when served with a side of yogurt, papad, and pickle.Â

If you were to name an Indian meal that exudes both comfort and indulgence, the most popular response would be khichdi. It's one of the simplest and easiest yet wholesome one-pot Indian dishes.
While rice and moong dal are the key ingredients, you can also use alternatives like millets, dalia, quinoa, oats, and other nutritious options to create your version of this comforting dish.
Today, I'm excited to share the oats khichdi recipe. In this dish, rolled oats are substituted for rice, combined with moong dal, veggies, and various spices. Masala Oats Khichdi Ingredients
- Oats: I used rolled oats for making khichdi. My favorite is Organic Bob's Red Mill old-fashioned oats. You can also use steel-cut oats.
- Moong Dal:Â I have used split yellow moong dal in this recipe. I did not soak the dal before cooking, as yellow lentils cook faster. You can also use masoor dal or toor dal.
- Vegetables:Â I like to use Onions, tomatoes, carrots, beans, and green peas. You can also swap for other vegetables like broccoli, potato, zucchini, and bell peppers.
- Ghee: I like to use homemade ghee for making khichdi. You may also use any cooking oil.
- Spices:Â cumin seeds, turmeric, red chili powder, hing (asafoetida).
How to Make Oats Khichdi
Press SAUTE on Instant Pot. Heat 2 tablespoons ghee (or oil). Add in 1 teaspoon cumin (jeera) seeds and 1 pinch hing (asafoetida). Let cumin seeds splutter.
Add ½ cup of chopped onions and saute till onions turn light brown.
Add 1-2 chopped green chilies, 1 teaspoon ginger (minced), and saute for a minute.
Then add ½ cup tomatoes (finely chopped) and cook for 1-2 minutes till they turn mushy.
Then add 1 cup mixed vegetables (carrot, beans, green peas), spices like ½ teaspoon turmeric, ½ teaspoon red chili powder, salt, and cook for a minute.
Next, add ½ cup rinsed moong dal, 1 cup rolled oats, and saute for 2 minutes.
Then add 4 cups water. Mix everything well. Also, deglaze the pot, i.e., make sure no food particles are sticking to it to avoid burn alerts.
Close the lid securely, and turn the vent to "SEALING". Select the PRESSURE COOK/MANUAL (High Pressure) setting and set the cooking time to 8 minutes.
When the instant pot beeps, allow the pressure to release naturally for 10 minutes, then release any remaining pressure before removing the lid.
Lastly, add 2 tablespoons coriander leaves, and mix the khichdi well.
Note: If khichdi is not mushy or too dry, select saute mode. Then add ½ cup of water and cook for another minute.
Instant Pot oats khichdi recipe is ready, serve with either yogurt, raita, or kadhi.
Stovetop Pressure Cooker Method
Follow the steps as Instant pot instructions. Give 2 whistles on medium flame and let the pressure release naturally. All the other steps remain the same. Pressure Cooker Masala Oats Khichdi is ready to serve.
How to Serve Rolled Oats Khichdi?
Oats khichdi tastes best when it's warm. Serve with your favorite side dishes like yogurt, raita, gujarati kadhi, papad, and pickles for a complete meal.
You can also serve it with buttermilk (masala chaas) and kachumber salad on the side.
Storage Suggestions
- Refrigerator: Oats Khichri tastes best when served fresh and piping hot. But if you have leftovers, you can store them in the fridge in an airtight container for up to 1-2 days.
- Freezer: I do not recommend freezing oats khichdi.
- Reheat: Vegetable Oats Khichdi soaks up all liquid and gets dry when refrigerated. For reheating, add a few tablespoons of water and heat in the microwave or stovetop pot.
Variations
- Lentils: If you can’t find split yellow moong lentils, you can also use split green moong lentils, masoor dal (pink lentils), or toor dal (split pigeon peas).
- Other Grains: You can also prepare the same khichdi with other grains like millets, quinoa, or rice.
- Vegan: To make this masala khichdi oats recipe vegan, replace ghee with oil.
- Add vegetables: You can also vary the vegetables added to this vegetable khichdi. You can also use spinach, potatoes, broccoli, and cauliflower.
- Sprouts: You can add moong sprouts or mixed sprouts to make it extra nutritious.
