Broccoli Paneer Bhurji Sandwich is a quick and healthy sandwich recipe prepared with spiced broccoli paneer/cottage cheese filling in it. Broccoli cheese sandwich is a perfect lunch box option, especially for the kids.

How to Make Broccoli Paneer Bhurji Sandwich

- Heat oil in a pan. Add the jeera (cumin) seeds and let them splutter.
- Add the ginger-garlic paste and green chilies and fry for a minute. Next, add the onions and saute till they are soft and transparent.
- Next add the finely chopped tomatoes, salt, turmeric powder, coriander powder, and garam masala and mix well. Cook until tomatoes are soft and mushy.
- Add the chopped broccoli and cook covered for 1-2 minutes till they are tender.
- Then add crumbled paneer and cook for 1-2 minutes.
- Finally, add lime juice and garnish with coriander leaves and switch off the flame.
- Broccoli Paneer bhurji is ready.
For Broccoli Paneer Bhurji Sandwich
Take bread slices, apply some butter, and spread two tablespoons of broccoli paneer bhurji mixture on one bread slice. Cover this bread with another slice of bread.
Heat Tawa on a medium flame, add some butter and place the sandwich.
Apply some butter to the bread and toast until the sandwich becomes golden brown on both sides.
Once the sandwich is toasted well, serve a healthy Broccoli Paneer bhurji Sandwich recipe hot with ketchup.
Tips & Variations
- Use either brown or multigrain bread for a healthier choice.
- Broccoli Paneer Bhurji is softer when homemade paneer is used.
- After adding paneer, you can add 2 tablespoons of milk to make paneer bhurji soft and moist.
- Do not overcook bhurji after paneer is added, else it will turn hard.
- Toast the bread on tawa or use a sandwich maker or grill to roast golden and crisp.
- If you are vegan replace butter with oil.

- 1 cup crumbled paneer (cottage cheese) (100 grams)
- 1 cup broccoli finely chopped
