Spicy Potato Sandwich, also known as Aloo Sandwich, is a quick and flavorful Indian-style breakfast or snack recipe made with boiled and mashed potatoes, mozzarella cheese, and a blend of spices, it is toasted to perfection in just 20 minutes. This delicious and filling sandwich is a favorite among toddlers and kids!

In this recipe, I’ve prepared a quick potato filling using boiled and mashed potatoes, chopped onions, and a few dry spices. However, you can skip the onions if you prefer.
I usually boil potatoes in the Instant Pot or an Indian stovetop pressure cooker and store them for 2-3 days. They come in handy for making dishes like sabudana vada, beetroot cutlets, aloo tikki, or vegetable rice cutlets.
Serve the potato sandwich hot, or let it cool slightly before packing it for a kid’s lunch box—it stays fresh and doesn’t turn soggy. I have toasted this sandwich on a hot tawa, but you can use a sandwich maker or grill to toast the sandwich.

How to Make a Spicy Potato Sandwich
Add 1 cup boiled and mashed potato, 2 tablespoons onion, 2 tablespoons coriander leaves, ½ teaspoon red chili powder, 1 teaspoon chaat masala, ½ teaspoon garam masala, salt, and mix this well in a bowl.
Take a bread slice and spread the green chutney on this spread and the grated mozzarella cheese.
Take another bread slice, apply green chutney, and spread the potato mixture. Now, place another slice of bread on top.
Put this on a tawa or grill the sandwich till browned from both sides.
Cut into triangles and serve a potato cheese sandwich hot with tomato ketchup.

- Serve potato sandwich with tomato ketchup on the side. You can also serve it with chickpea cucumber salad and creamy tomato soup for a filling meal.
