Millet Fried Rice Recipe Ingredients
- Millet: I used foxtail millet in this recipe. You can any millet like little millet, kodo millet or barnyard millet. Note: I did not soak the millet before cooking in this recipe.
- Vegetables: I used veggies like carrots, beans, broccoli, and bell peppers, in this recipe, but feel free to add other veggies of your choice, like mushrooms and sweet corn.
- Paneer: I used small cubes of paneer in this recipe for extra protein. You can also use extra-firm tofu.
- Garlic & ginger: Use freshly minced garlic and ginger for the best flavor.
- Spring Onions: I used both white and green parts of the spring onions. I like to use green onion to garnish the millet fried rice. You can also use scallions.
- Soy sauce: I used light Soy sauce. If gluten-free, you can use Tamari or coconut aminos.
- Oil: I used olive oil to cook the fried rice.
- Seasonings: Salt and freshly crushed black pepper.
How to Make Millet Fried Rice
How to Cook Millet:
On Stovetop Pot: Cook the ½ cup of rinsed millet with 1 cup of water on medium-low heat for 15-20 minutes or until cooked, and let it cool.
Stovetop Pressure Cooker: Pressure cook the ½ cup of rinsed millet with 2 cups of water for two whistles on medium-low heat. Let the pressure release naturally.
In Instant Pot (Electric Pressure Cooker): Pressure cook the ½ cup of rinsed millet with 1 cup of water on MANUAL/PRESSURE COOK mode for 10 minutes. Let the pressure release naturally. Here is the detailed recipe, How to cook Millet in the Instant Pot.
Stir Fry:
Heat 2 tablespoons of the olive oil in a skillet or wok over medium-high heat. Add the minced ginger and garlic and saute for 30 seconds or until aromatic.
Then add white onions and green chili and cook for about 2 minutes till the onions turn soft.
Add carrots, bell peppers, broccoli, green beans, salt, and stir fry on high flame till the vegetables are cooked and tender.
Then add cubed paneer and saute for another minute.
Add the cooked millet, soy sauce, salt, and ground black pepper. Gently toss the millet and stir-fry until heated through (about 2 minutes).
Finally, garnish with spring onion greens and serve immediately.
What to Serve with Foxtail Millet Fried Rice?
Serve the Healthy Millet veggie paneer fried rice recipe with some Manchurian gravy and a soup. If you don't prefer sides, it can be eaten as it is.
Storing Suggestions
