Mushroom Fried Rice is a quick, easy, and delicious Indian Chinese style stir-fried rice that can be prepared with leftover rice in just 15 minutes and makes a great weeknight or lunchbox meal that everyone will love. Vegan and kid-approved!

Indo-Chinese cuisine is widely loved by people of all age groups. From veg hakka noodles to chili potatoes, chili paneer, spring rolls, and more, we have loved each and every delicacy.
However, the most adored and loved delicacy is none other than fried rice. The best part? You can make fried rice in various ways, including paneer fried rice, vegetable fried rice, burnt garlic fried rice, and the list is never-ending.
Today I am sharing another quick and delicious fried rice made with mushrooms. It takes only 15 minutes if you already have cooked rice in the refrigerator. Perfect weeknight dinner for busy days.

How to Make Mushroom Fried Rice
Prep :
Cook ½ cup of raw basmati or any rice and allow it to cool completely. You can keep the rice in the refrigerator to get extra firm if you want. Here is the detailed recipe "how to cook basmati rice in instant pot"
Also, wash and slice the mushrooms and bell pepper.
Stir Fry:
Heat 1 tablespoon of the sesame (or olive oil) in a skillet or wok over medium-high heat.
Add 2 minced garlic cloves and saute for 30 seconds or until aromatic.
Then add 1 small onion (finely chopped) and 2 green chilies and cook for about 2 minutes till the onions turn soft.
Then add 1 cup of sliced mushrooms, ½ cup bell pepper (thinly sliced), and stir fry till the vegetables are cooked and tender. The mushrooms will ooze out water, do not worry. It will evaporate in a few minutes.
Then add 2 teaspoons soy sauce, 1 teaspoon vinegar, and saute on a high flame, stirring regularly without getting burnt.
Add 1.5 cups of cooked basmati rice, salt, and ground black pepper and gently mix it evenly. Let this be in a low flame for 2-3 minutes.
Final Garnishing:
Sprinkle sliced spring onions just before serving. Then, quick mushroom fried rice is ready to serve.
What to Serve with Mushroom Fried Rice?
Serve Mushroom Fried Rice with sriracha sauce or gobi manchurian on the side. If you dont prefer sides, eat it as is.
Expert Tips
- Make sure the heat is medium-high to high while stir-frying.
- Don’t cover the pan. This causes the mushrooms to steam.
- Add soy sauce, in the end, to prevent it from absorbing too much into the mushrooms and making them too mushy.
Variations
- Protein: Add ½ cup of crumbled paneer (Indian cottage cheese), scrambled tofu, or eggs.
- Greens: Stir in some spinach leaves or kale towards the end of the cooking time.
- Spicy: Add either crushed red pepper flakes or a few teaspoons of sriracha or schezwan sauce.
- Keto: Replace basmati rice with cauliflower rice. You can also add steamed broccoli or edamame to the keto diet.

- 1 cup white mushrooms sliced

- Try to use low sodium soy sauce and if you are looking for gluten-free use Tamari or also Coconut Aminos replaces the soy sauce and it’s the best!
