Edamame Sweet Potato Chaat is a healthy, high-protein snack made with frozen shelled edamame beans, vegetables, and fresh herbs, all tossed in Indian spices and sweet-and-spicy chutneys. It makes a perfect wholesome snack or side dish.

Edamame are fresh, young soybeans, that are high in protein, fiber and are an excellent source of plant based protein. I am always looking ways to use them on daily basis in my kitchen. I use them to make edamame sundal, edamame corn salad, edamame upma, these days I susbstitute green peas with edamame in my most of my Indian recipes.
Today I am sharing another interesting recipe - Edamame Chaat. Chaat with edamame? Yes, you heard it right. It's so addictive and incredibly easy to make in less than 15 minutes if you have chutneys handy. Perfect as a midday snack or a flavorful side dish for parties.
Ingredients

- Edamame: I used frozen shelled edamame beans. Cook or thaw the edamame according to package instructions. You can find them in freezer section of grocery stores like Sprouts, Safeway.
- Veggies: Boiled sweet potatoes, onion, tomato, cucumber. You can substitute sweet potato with boiled potatoes.
- Spices: Chaat masala, homemade roasted cumin powder, black salt and salt.
- Chutneys: I used homemade green chutney and sweet tamarind chutney. You can skip green chutney if its not handy.
- Roasted Peanuts: I used air fryer roasted peanuts. They add nice crunch, dont skip. If you dont have you may also use pumpkin, or sunflower seeds.
- Sev: I used thin nylon sev.
How to Make Healthy Edamame Sweet Potato Chaat
I used frozen shelled edamame, you can thaw or cook according to the package instructions.
In a large bowl, add edamame, veggies like boiled sweet potato, onion, tomato, cucumber, pomegranate seeds, roasted peanuts, green chutney, sweet tamarind chutney, lemon juice, spices like chaat masala, roasted cumin powder, salt, pepper, sev and coriander leaves.

Toss everything well. Adjust the seasonings.

Garnish with more sev and serve immediately.

Serving Suggestions
Serve this delicious edamame chaat with hot cup of masala chai as a eveneing snack or side dish with your lunch.
Expert Tips
- You can also add hearty veggies like diced avocado, shredded carrot.
- If using edamame pods in place of shelled edamame, simply remove the soy beans, steam and use them.
- You can substitute boiled sweet potatoes with air fryer roasted sweet potatoes as well.
