KIDS LUNCH BOX #18 - Spinach Corn Rice + Yogurt + Grapes + Chocolate Brownie

Here is what I packed for school lunch…
LUNCH - Spinach Corn Rice - It is healthy and full of proteins, fibers and vitamins and perfect for lunch boxes, that your kids and your family would love to have it.Below is the recipe
Spinach Corn Rice
Ingredients
Measuring cup used 1 cup = 250ml
- 1 cup Basmati Rice (short grain also can be used)
- ½ cup sweet corn (i used frozen)
- 1 cup spinach (palak) puree [made with 2-3 cups of spinach +½ cup of water]
- 1 medium onion (thinly sliced)
- 1 tbsp ginger-garlic paste
- 1 tsp garam masala or biryani masala powder
- ¼ tsp turmeric powder
- 1 tsp red chilli powder or 2 green chilli
- ½ tsp cumin (jeera) seeds
- 1 inch cinnamon stick
- 2 cardamom
- 2 cloves
- 1 tbsp lime juice
- salt to taste
- 2 tsp oil or ghee
- 1 cup water (since spinach puree also contains water)
Instructions
Instant Pot Method
- Press saute mode on Instant Pot. Add oil and once it's hot, add whole spices, cumin .
- Then add sliced onions, ginger-garlic paste, green chillies .Saute for 2-3 minutes until they turn soft and light brown in color - stir regularly
- Add spinach puree, corn ,let it boil for 1-2 minutes.
- Add rinsed Basmati Rice, water, turmeric powder, garam masala powder, and give a stir .Adjust water appropriately.
- Close the lid on the pot, and turn valve from VENTING to SEALING position
- Press CANCEL button on Instant Pot.Set the pot to MANUAL/PRESSURE COOK button (High Pressure) and set timer to 5 minutes
- Wait for Natural Pressure Release(NPR).BE CAREFUL OF THE HOT STEAM
- Remove lid away from you,add lime juice and Mix well.
- Spinach Corn Rice is ready.Serve with Raita or plain yogurt.
Indian Pressure Cooker Method
- Heat a pressure cooker with oil on medium flame, Add oil and once it's hot, add whole spices, cumin .
- Then add sliced onions, ginger-garlic paste, green chillies .Saute for 2-3 minutes until they turn soft and light brown in color - stir regularly
- Add spinach puree, corn ,let it boil for 1-2 minutes.
- Add rinsed Basmati Rice, water, turmeric powder, garam masala powder, and give a stir .Adjust water appropriately.
- Close the lid place a whistle and cook for 2 whistles on medium flame.
- After 10 mins add lime juice and Fluff up the rice gently.
- Spinach Corn Rice is ready.Serve with Raita or plain yogurt.
Notes
You can also try my other Spinach rice variety without pureeing the spinach.
SNACK - Yogurt -Pack this in a separate container with leak proof lid.Add a few teaspoon of milk to yogurt raita can help it not turning sour by lunch time.
SNACK - Red Grapes - Wash the grapes before packing into the box.
SNACK - Chocolate Brownie - Sometimes its good to treat kids with cakes or brownies.I sent a store brought brownie.
Prep Work For The Previous Evening
- Wash and puree spinach in the night itself if you dont have time in the morning and store in an airtight container.
Notes
- Packed in a stainless steel tiffin box called Lunchbots which is Eco-Friendly, Dishwasher Safe, BPA-Free and is easily available on Amazon .Do not use plastic lunch boxes to your kids, they are toxic.
- Add a few teaspoon of milk to yogurt can help it not turning sour by lunch time.
- You can increase or decrease quantity based on your child's appetite.
