Paneer Bhurji Sandwich recipe is a quick and healthy sandwich prepared with spiced paneer/cottage cheese filling in it. This is a perfect lunch box option, especially for the kids.

The paneer stuffing mixture is cooked here and is called bhurji which is prepared similar to egg bhurji. Since my husband doesn't eat eggs when I crave egg bhurji I usually make this paneer bhurji for dinner.
The leftovers I use for preparing a sandwich for the next day's breakfast or my kids lunchbox. Use multi-grain or whole wheat bread for a healthier choices.
There is another version of paneer sandwich where the stuffing is uncooked ie grated paneer is mixed with onion, chilies, and few spice powders and stuffed between bread.
Paneer Bhurji sandwich is an easy, delicious, kid’s favorite sandwich. It is a good start Here I have used the tawa to toast the sandwich but you can use a sandwich maker or grill to toast.
Another noteworthy tip, if your paneer bhurji is very dry add 2 tablespoons of milk while preparing bhurji makes it moist and soft.
How to Make Paneer Bhurji Sandwich
To make Paneer Bhurji:
In a Kadai, add oil, once oil is heated add cumin seeds, let it splutter then add onions, ginger, garlic, green chili, turmeric and saute well till onions are lightly browned.
Then add jeera powder, garam masala, red chili powder, and saute for a few secs. Now add tomato and cook until they turn soft.
Then add crumbled paneer, salt and cook for 1-2 minutes. At this point you can also add 2 tablespoon of milk makes paneer bhurji soft and moist. Finally add lime juice and garnish with coriander leaves and switch off the flame.
Paneer bhurji is ready.
For Paneer Bhurji Sandwich:
Take bread slices, spread paneer bhurji mixture on bread slice. Add some mozzarella cheese on top and close another slice of bread on top.
Heat tawa on medium flame, add some butter to the tawa, and place paneer sandwich on it. Apply some butter on top of the bread and toast till the sandwich becomes golden brown in color on both sides.
Once the sandwich is toasted well, Serve Cheese Paneer bhurji Sandwich hot with ketchup.

Serving suggestions
Serve Paneer Bhurji Sandwich with tomato ketchup or green chutney on the side. You can also serve with milkshake or juice for toddlers and kids and serve with coffee or tea for adults.

- Use brown or multigrain bread for healthier choice.
- Paneer Bhurji is more soft, when homemade paneer is used.
- After adding paneer you can also add 2 tablespoon of milk makes paneer bhurji soft and moist.
- Do not over cook bhurji after paneer is added, else it will turn hard.
- Toast the bread on tawa or use sandwich maker or grill to roast golden and crisp.
- If you are vegan skip mozzarella or use vegan cheese and replace butter with oil.
- You can also add finely chopped bell pepper's or corn to this bhurji.

Ingredients
- Measuring cup used 1 cup = 250ml
For Paneer Bhurji
- 1 cup crumbled paneer (cottage cheese) (appx 100 grams)
- ¼ cup onion finely chopped
- ¼ cup tomatoes finely chopped
- ½ teaspoon jeera (cumin seeds)
- 1 teaspoon green chili finely chopped
- ½ teaspoon garlic minced
- 1 teaspoon ginger minced
- 1 tablespoon coriander leaves chopped
- 1 teaspoon lime juice
- ¼ teaspoon turmeric powder
- ¼ teaspoon red chilli powder
- ¼ teaspoon jeera (cumin) powder
- ¼ teaspoon garam masala powder
- 2 teaspoon oil
- salt to taste

- 6 slices bread
- ½ cup mozzarella cheese ,optional
- 1 tablespoon butter
Instructions
To Make Paneer Bhurji:
