Love Butternut Squash? I like cooking fresh seasonal produce, and Butternut squash is a Fall/Autumn staple. However, butternut squash is in season all around the year in the USA and is very healthy.

It is a versatile vegetable that is perfect for soups, pasta, roasting, stews, curries, purees, mashes, side dishes, and desserts.

What is Butternut Squash?

Butternut squash is a type of winter squash that grows on a vine and like pumpkins, it is a member of the Cucurbitaceae family. Butternut squash has pale yellow-orange outer skin, and a bright orange-flesh and seeds interior. Both the skin and the flesh are hard and firm, almost shaped like an elongated pear.

Winter varieties include butternut, pumpkin, acorn, delicata, hubbard, and spaghetti squash. Zucchini, yellow, and pattypan squash are considered summer squashes.

The taste of butternut squash is sweet, a little nutty similar to that of a pumpkin or sweet potato.
