Paneer Bhurji Sandwich recipe is a quick and healthy sandwich prepared with spiced paneer (Indian cottage cheese) filling. This is a perfect lunchbox option, especially for the kids.

The paneer stuffing mixture here is called bhurji, prepared in a similar way to egg bhurji. Since my husband doesn’t eat eggs, whenever I crave egg bhurji, I usually make this paneer bhurji for dinner instead.
I use the paneer bhurji leftovers to make a sandwich for the next day’s breakfast or for my kid’s lunchbox. For a healthier option, use multigrain, whole wheat, or sourdough bread.
The Paneer Bhurji sandwich is an easy and delicious kid’s favorite, perfect for a quick meal. It makes a great start to the day. Here, I’ve toasted the sandwich on a tawa, but you can also use a sandwich maker or grill for toasting. If you are vegan, then use tofu bhurji instead of paneer.
For a healthier option, you can add broccoli to make broccoli paneer bhurji and use it as a filling for a broccoli paneer bhurji sandwich.

How to Make Paneer Bhurji Sandwich
To make Paneer Bhurji:
In a Kadai, add oil. Once the oil is heated, add cumin seeds, let them splutter, then add onions, ginger, garlic, green chili, and turmeric, and saute well till onions are lightly browned.

Then add roasted jeera powder, red chili powder, garam masala, and saute for a few seconds. Now add the tomato and cook until it turns soft.

Then add crumbled or shredded paneer, salt, and cook for 1-2 minutes. At this point, you can also add 2 tablespoons of milk to make the paneer bhurji soft and moist. Finally, add lime juice and garnish with coriander leaves and switch off the flame.

Paneer bhurji is ready.

For Paneer Bhurji Sandwich:
Take bread slices, and spread the paneer bhurji mixture on the bread slices. Add some mozzarella cheese on top and close another slice of bread.

Heat the tawa on medium flame, add some butter to the tawa, and place a paneer sandwich on it. Apply some butter on top of the bread and toast until the sandwich becomes golden brown on both sides.

Once the sandwich is toasted well, serve the cheesy paneer bhurji sandwich hot.
Serving Suggestions
Serve Paneer Bhurji Sandwich with tomato ketchup or green chutney on the side. You can also serve it with a dry fruits milkshake or strawberry juice for toddlers and kids. Serve it with coffee or adrak wali chai for adults.

- Paneer bhurji is softer when homemade paneer is used.
- After adding paneer, you can also add 2 tablespoons of milk to make the paneer bhurji soft and moist.
- Do not over-cook bhurji after paneer is added, else it will turn hard.
- Toast the bread on a tawa or use a sandwich maker or grill to roast golden and crisp.
- If you are vegan, skip mozzarella or use vegan cheese and replace butter with oil.
- You can also add finely chopped bell peppers, mushrooms, or sweet corn to this bhurji.

Ingredients
For Paneer Bhurji
- 1 cup crumbled paneer (Indian cottage cheese) (appx 100 grams)
- ¼ cup onion finely chopped
- ¼ cup tomatoes finely chopped
- ½ teaspoon jeera (cumin seeds)
- 1 teaspoon green chili finely chopped
- ½ teaspoon garlic minced
- 1 teaspoon ginger minced
- 1 tablespoon coriander leaves chopped
- 1 teaspoon lime juice
- ¼ teaspoon turmeric powder
- ¼ teaspoon red chilli powder
- ¼ teaspoon jeera (cumin) powder
- ¼ teaspoon garam masala powder
- 2 teaspoons oil
- salt to taste
Other Ingredients
- 6 slices bread
- ½ cup mozzarella cheese (optional)
- 1 tablespoon butter
Instructions
To Make Paneer Bhurji:
- In a Kadai, add oil, once oil is heated add cumin seeds, Let it splutter then add onions, ginger ,garlic, green chili, turmeric and saute well till onions are lightly browned.
- Then add jeera powder ,garam masala ,red chili powder and saute for few secs.
- Now add tomato and cook until they turn soft.
- Then add crumbled paneer ,salt and cook for 1-2 minutes.At this point you can also add 2 tablespoon of milk makes paneer bhurji soft and moist.
- Finally add lime juice and garnish with coriander leaves and switch off the flame.
- Paneer bhurji is ready .
For Paneer Bhurji Sandwich:
- Take bread slices, spread paneer bhurji mixture on bread slice.
- Add some mozzarella cheese on top and close other slice of bread on top.
- Heat tawa on medium flame, add some butter to the tawa and place bread on it.
- Apply some butter on top of the bread and toast till sandwich becomes golden brown in color on both sides.
- Once the sandwich is toasted well, serve Paneer bhurji Sandwich hot with ketchup.
