This Lauki ka Raita or Bottle Gourd Raita recipe is a healthy and easy to make accompaniment made using grated bottle gourd, yogurt and few spices and it goes very well with Indian meals. Lauki Raita is gluten free, keto and low carb recipe.
There are many names for Bottle Gourd. In some other Indian languages its also called lauki, dudhi, ghiya, sorekai, sorakaya.They are also known as Cucuzza, Calabash, Opo Squash in other countries.
This healthy Lauki raita is great for weight loss and is also known as Lauki ka raita or Ghiya raita or Dudhi raita.

Normally, i use plain yogurt but if you like raitas to be little thick and creamy, use plain Greek Yogurt. If you want it thinner, mix in a little cold water till you achieve the desired consistency.

How to make Lauki Ka Raita recipe
Peel the skin and grate lauki using medium sized blade.
Lauki can be cooked in 3 ways:
1. Boil some water in a pot add the grated lauki and cook for 5 minutes till tender
OR
2. If using Instant Pot ,add shredded lauki and ¼ cup of water in to the inner pot. PRESSURE COOK (High Pressure) for 0 minutes and Quick Release.
OR
3. You can add grated lauki along with ¼ cup of water in a microwave-safe bowl and microwave for 2-3 minutes until the bottle gourd is completely tender.
Strain the cooked lauki and let it cool.
Whisk the yogurt or curd in a large mixing bowl.
Add cooked lauki, green chilies, roasted jeera powder, chat masala powder and black salt. Taste at this stage to make sure the amount of salt and spices is enough.
Lauki Raita Recipe is ready, Serve chilled.
Tips & Variations
- Adding milk to the yogurt helps it from turning sour.If you are using fresh yogurt then skip it.
- Refrigerate raita until serving time.
- Sugar balances the heat and the sourness, if you don’t want then skip sugar.
- You can also add finely chopped mint (pudina) instead of coriander leaves.
- If the raita becomes too thick add more milk.

- 1 cup lauki (bottle gourd ) grated
- 1.5 cup curd (yogurt) whisked
- 1 green chilli finely chopped
- ½ teaspoon roasted cumin (jeera) powder
- ½ teaspoon chat masala powder
- ¼ teaspoon black salt
- 1 tablespoon coriander leaves (cilantro) for garnish
Instructions
