The Veg Mayo Sandwich recipe is a quick and easy-to-make healthy sandwich made with fresh vegetables, eggless mayonnaise, and spices. Eat them as a cold sandwich or grilled. Serve it for breakfast, and after-school snacks, or be packed into a lunch box.
When I am lazy thinking about breakfast or evening snacks, this healthy veg mayo sandwich or cream cheese sandwich is my go-to recipe in our house. I used eggless mayonnaise in this recipe. But you can use any mayonnaise.
I like to eat this as a cold sandwich but tastes good when toasted or grilled as well. You can also ask your child to make this vegetable sandwich recipe, as this does not require any fire for cooking.
Ingredients
Here are the basic ingredients you will need to make a vegetable mayo sandwich recipe.
- Bread slices: You can use any kind of bread, such as white milk bread, brown bread, multigrain bread, or sourdough bread.
- Mayonnaise: You can use homemade or store-bought mayonnaise. A good-quality regular mayo, such as Best Foods or Hellman’s, works best for this recipe. You can also use avocado oil, vegan, or eggless mayonnaise.
- Vegetables: I used carrots, capsicum/bell pepper, and cabbage. You can add other veggies like onion, sweet corn, lettuce, cucumber, avocado, and celery.
- Seasonings: I used dried oregano, freshly ground black pepper & salt.
- Butter: It adds rich flavor to the sandwich. If you are a vegan, replace it with vegan butter.
How to Make Vegetable Mayonnaise Sandwich
Firstly, In a mixing bowl, add mayonnaise, chopped veggies, and seasonings. Mix everything well.
Cut the brown edges of the bread (optional).
Apply some butter to both slices of bread.
Spread veg-mayo mixture generously on one slice of bread slice.
Then, cover and press with another bread slice over it. Cut the sandwich into triangles/squares.
Serve an Eggless Veg Mayonnaise Sandwich with tomato ketchup.
How to Serve Vegetable Mayo Sandwich
- As a breakfast or snack - With Masala Chai or Milkshake.
- Serve it with soup - A hot bowl of creamy tomato soup, lentils, or sweet corn soup complements well with the sandwich.
- Serve it with a salad - It makes a perfect meal when you pair a mayonnaise sandwich with your favorite salad, like chickpea salad, avocado salad, or pasta salad.
Storage & Make-Ahead
Make ahead: You can prepare the veggie mayonnaise mixture a day before serving and store it in the refrigerator in an airtight container. When you are ready to serve, assemble the sandwich and Enjoy.
If you are packing it for travel or lunchbox, then wrap the sandwich tightly using plastic wrap, wax paper, or aluminum foil, to keep it fresh.
Store: Mayo sandwich tastes best when consumed within a few hours of making it. However, you can wrap the sandwich tightly in aluminum foil or plastic wrap and store it in an airtight container in the refrigerator for up to 1 day. This will prevent the bread from drying out and keep the bread fresh.
Note: Certain vegetables like cucumbers and tomatoes may release water and make the sandwich soggy. So, it is best to use these vegetables just before assembling the sandwich.

- Toast the bread: You may toast the bread on Tawa, use a sandwich maker, or grill it to golden brown and crisp. This will give the sandwich a nice crunch and prevent the mayonnaise and veggies from getting soggy.
- Butter: Smearing butter on the bread acts as a moisture barrier, slowing down the transfer of moisture from the filling to the bread and preventing it from getting soggy. So don't skip it.

- Other Veggies: You can add other vegetables of your choice, like regular or spring onion, sweet corn kernels, lettuce, cucumber, tomatoes, and celery.

- Vegan: use vegan mayonnaise and butter.
- Add Protein: You can also add mashed chickpeas, crumbled paneer, or tofu to make it nutritious.
